INGREDIENTS 1/2 cup (1 stick, 113 g) of butter, softened 1/2 cup (110 g) of tightly packed brown sugar 1/4 cup (50 g) white sugar 1 large egg, 1 teaspoon of vanilla 1/2 teaspoon baking powder 1 cup (125 g) of all-purpose flour 1/2 cup (90 g) of butterscotch chips
INSTRUCTIONS 1. Preheat oven to 350 degrees F. Line a 8x8 inch square pan with parchment paper.
2. Add the butter, white sugar and brown sugar to a bowl and cream together until very smooth, 1-2 minutes. Add egg and vanilla and mix well.
3. Add flour and baking powder and stir until combined. Fold in butterscotch chips.
4. Spread into prepared baking pan and bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool then cut into squares. Serve with vanilla ice cream and caramel sauce, if desired.
