These easy + healthy Baked Apple Oatmeal Cups make a delicious grab-and-go seasonal breakfast. Think apple pie mixed with oats baked into a yummy muffin. I also love adding them to my meal prep because then I can make them ahead and have them ready for a busy morning or I can pop them into lunch boxes as a kid-friendly afternoon snack.

BAKED APPLE OATMEAL CUPS RECIPE
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup organic buttermilk (you can sub any milk you prefer)
2 eggs, beaten
1/2 cup applesauce (I used cinnamon applesauce)
1 large apple, chopped (1 heaping cup)
1/4 cup raisins
Preheat oven to 350ºF. Spray a 12-count muffin pan with non-stick cooking spray or coat with coconut oil and set aside.
In a large bowl combine oats, baking powder, cinnamon, buttermilk, eggs, and applesauce. Mix together until everything is well incorporated.
Add in chopped apple and raisins and gently toss until they are evenly distributed throughout the batter.
Divide batter amongst all 12 muffin cups and pop in the oven for 25-30 minutes or until they have set through and are golden brown on top.
Cool and enjoy.
*I like to store these in an airtight container and keep them in the fridge. They will last a good week stored this way.

Apple Oat Muffins
Ingredients
Apple - 1
Rolled Oats - 1 cup
All purpose flour - 1 cup
Sugar - 3/4 cup
Baking soda - 1/2 tsp
Baking powder - 1 tsp
Cooking oil - 100 ml
Milk - 1 cup
Cinnamon powder - 1 tsp
A little Sugar
A pinch of Salt
Method:
Mix the apple with sugar, salt and cinnamon powder.
In a wide bowl, add flour, sugar, baking soda, baking powder and oats. Mix them well.
To this, add milk and cooking oil. Gently mix everything together.
Add the apples to the oats batter and gently mix it untily you get a think consistency.
Line silicone uffin moulds with cupcake liner. Use an ice cream scooper and fill three quarters of the cup with the batter.
Meanwhile, preheat the oven at 180 degree centigrade.
Place the cups on a baking tray and bake it in the oven.

2 Cups Flour - Whole Wheat or All Purpose Flour (240g)
3 Teaspoons Baking Powder (15g)
1/2 Teaspoon Salt (3g)
1 Teaspoon Ground Cinnamon (2.8g)
1/2 Teaspoon Ground Nutmeg (1.1g)
1/4 Cup Sugar (48g)
1/2 Cup Unsweetened Applesauce (113g)
1 Cup Regular or Plant Based Milk (240ml)
1 Cup Grated Apple (about 1 apple)
1/2 Cup Chopped Pecans (56g)
Directions:
1. In a large mixing bowl, sift together the flour, baking powder, salt, cinnamon, nutmeg, and sugar, Set aside. In another bowl, whisk together the applesauce and milk until well combined. Stir the applesauce mixture into the dry ingredients just until combined. Fold in the grated apple and pecans.
2. Grease a muffin tin with butter or cooking spray. Spoon batter into each cup. Bake in a preheated oven at 425°F for 15 to 20 minutes or until an inserted toothpick comes out clean. Remove muffins from tin and place on a wire rack to coo completely.
