fresh dill, chopped

capers

horseradish

whole wheat bread

teaspoon
butter, softened

smoked salmon

each
cucumber slices, thin
Directions:
Combine mayonnaise, onion, dill, cappers, horseradish and pepper. Trim crusts from bread. Spread with butter then mayonnaise mixture. Arrange salmon and cucumber over 4 slices of bread. Top with remaining bread. Cut each sandwich into 4 triangles or squares.

A native of Dansville, NY., along the Route of Phoebe Show, Monte Verde has many memories of meeting the Lackawanna trains at the station while growing up. He looks at the history of the Phoebe Snow character and the route over which it traveled, from the Hoboken water front through the many scenic wonders such as the Delaware Water Gap and the Poconos. Included are some views of the detours in the wake of Hurricane Diane in 1955. With more than 200 images, this was not a show to miss.

Americans Try Mince Pies for the First Time
Amazingly we have made it all these years having never tried a mince pie. We tried a few store bought versions of this traditional British Christmas treat: one by Burt's the Bakers from Wales and the other by Walker's from Scotland. We weren't trying to leave England out, this is just what we found in our store!
Sure, home made would be the best, but after watching Tina make Chorley cakes, you'll see why we stuck to store bought!
