Smoking Salmon and Trout Using the Big Chief Smoker
The Luhr-Jensen Big Chief smoker is an affordable and simple to use smoker that is small on price and big on taste. Here I demonstrate how I use the Big Chief smoker to produce consistently delicious, moist, and safe to eat smoked salmon and trout.

Luhr-Jensen Big Chief Smoker:
Alder Chips:
Applewood Chips:
Jalapeno jelly:
Honey:
Directions:
- Load smoker with fish with thickest cuts on the bottom
- Run two full pans of chips thru the smoker. I prefer alder and apple
- Pre-heat oven to 350 F
- Line cookie sheets with foil and lightly oil
- Spread salmon/trout on cookie sheets and brush with honey or jalapeno jelly for a spicer mix
- Cook in oven for ~15 minutes until edges darken
- Enjoy!
