How To make White Bean Salad
1 lb Baby lima beans,dried
6 c Water
1 Bay leaf
3/4 ts Leaf thyme,crumbled
3/4 ts Red pepper flakes
1/2 c Olive oil
1 ts Lemon rind,grated
1/2 c Lemon juice,fresh
2 Garlic cloves
1/2 c Dill,fresh
1/2 c Parsley leaves
1 1/2 ts Salt
2 Eggs,hard-cooked
1 c Black olives,chopped
3 Green onion,sliced
1. Soak beans overnight, or quick-soak according to package directions.
Drain. Combine beans, water, bay leaf, thyme and pepper flakes in Dutch oven. Simmer, covered, 45-60 minutes or just until the beans are tender; do not overcook. Drain; rinse the beans under cold running water. (Can be prepared up to this point 2 days ahead and refrigerated.) 2. Combine oil, lemon rind and juice, garlic, dill, parsley and salt in
blender or food processor. Whirl just until smooth. Toss with beans. Scrape into shallow serving dish; cover and refrigerate at least 4 hours or up to a day. 3. Separate hard-cooked egg yolks and whites, and press through sieve.
Garnish top of beans with chopped olives, green onions and sieved eggs. Serve cold.

PIYAZ: A MEDITERRANEAN STYLE WHITE BEAN SALAD
FULL RECIPE FOR THE PIYAZ
Ingredients
1 cup white beans
250 g (~2 large) onions
500 gr (~3 medium) tomatoes
1 bunch parsley
Marinade:
½ cup olive oil
1 tbsp salt
2 tbsp wine vinegar
1/3 cup beans’ cooking water
Dressing:
1 lemon (juice only)
½ tbsp. salt
1/3 cup cold-pressed olive oil
Directions:
PREPARATION
A day before, wash 1 cup of white beans with running water
Then, soak the white beans in room-temperature-water for 24 to 30 hours
COOKING
Boil 6 cups (~1.5 L) of water
Strain the soaked white beans and place into the boiling water
Set a medium heat for the stove and cook the beans for 45-50 minutes, until the beans become soft, but not mushy
THE MARINATION
Pour ½ cup of olive oil into a bowl
Add 1 tbsp of salt and 2 tbsp of wine vinegar
Whisk the ingredients, thoroughly
Rest the cooked beans for 10 minutes after turning off the stove
Then, strain the beans and soak in the marinade while they are still hot
Add 1/3 cup of the water (in which you boiled the beans)
Thoroughly mix the ingredients and cover the bowl with a lid
Rest the beans in the marinade for minimum 3 hours or overnight
VEGETABLES
Thoroughly wash and dry the vegetables
Divide the onions into two equal pieces and thinly slice them into half circles
Gently separate their layers and place into a bowl
Dice the tomatoes, place into a separate bowl
Mince the parsley, place into a separate bowl
THE DRESSING
In a dressing bowl, combine the juice of 1 lemon, ½ tbsp. of salt, and 1/3 cup of cold-pressed olive oil
Thoroughly whisk the ingredients, until you achieve a creamy and thicker dressing
Now, the dressing is ready for serving!!
MAKING THE PIYAZ
Combine the ingredients of the PIYAZ just before serving
Marinating the beans one day before increases this salad’s flavour even more
However, the vegetables need to be freshly prepared to achieve a tasty and crunchy PIYAZ
So, begin with the marinated white beans:
Place the marinated white beans into the bottom of the serving bowl
Add a layer of crunchy onion slices over the beans,
Freshly diced tomatoes,
And top it off with minced green parsley
SERVING
Before serving, pour a generous amount of the dressing over the PIYAZ
You can save some of the dressing for personal desires

Turkish vegetarian food
2 Servings
Ingredients:
200g white Beans boiled (dry weight)
15 black Olives
1-2 red Peppers chopped
1-2 Tomatoes chopped
1 Onion chopped
2 Pickles chopped
1 1/2 tsp Sumac
Parsley chopped
2 tbsp Lemon Juice
3 tbsp Olive Oil
3/4 tsp Salt
