How To make Stuffed Cucumber
1 Straight cucumber
125 g (4oz) Cream cheese, softened
1/2 t Dry onion flakes, crushed
1/2 t Dried dill weed
Paprika Score cucumber all around by scraping from top to bottom with fork tines. Cut ends off and scoop out seeds from center. A small spoon and a vegetable corer work well. Be sure to remove all seeds because that is the part where most of the moisture is. Mash cheese with a fork. Add onion and dill. Mash together. Stuff cucumber. Wrap and chill. To serve, slice and sprinkle with paprika. May be served as is or on a cracker. ~---

Cucumber & Cheese Rolls
Ingredients:
1 cucumber
100 grams vegan white cheese
finely chopped red bell pepper
fresh dill
Preparation
In a medium bowl, add in cheese & mash
Add in finely chopped bell pepper & dill
Stir all ingredients to combine.
Using a vegetable peeler or mandoline, peel the cucumbers lengthwise into thin slices.
Spread a small spoonful of filling over a cucumber slice.
Starting from one end, roll the cucumber into a spiral. Repeat with remaining cucumber slices and filling.
Cucumber Avocado Rolls
Ingredients
1 Avocado
½ of a lime
salt
black pepper
1 cucumber
1 medium-size carrot( finely slice into strips)
red & yellow bell pepper( finely slice into strips)
Instructions
Into a mixing bowl, add the avocado & lime juice.
Mash with a fork. Season with salt & pepper.
Use a mandoline or potato peeler to cut long thin strips from the cucumber. Take a cucumber strip and spread a thin coat of the avocado mixture along the length of the cucumber. Roll it up needed.
Do the same with the rest of your cucumber strips.

Cucumber Bites with Cream Cheese

cream cheese, cucumber, dill, garlic, paprika powder, pepper, pine nuts, salt
*Recipe*
Chop the dill.
Use a large salad bowl and add the cream cheese, pine nuts, dill and garlic.
Season with salt and pepper and mix everything together.
Slice the cucumber through the middle and remove about half of its inside so you can make room for the filling.
Fill the cucumber halves with cream cheese and use a teaspoon to spread it.
Slice filled cucumber into 1 inch (2.5 cm) thick slices.
Serve cold!

* Chopped Coriander Leaves : 1/2cup
* Green Chillies : 1or 2no.s
* Black Pepper Salt : 1tsp
* Namkeen Sev : 1/2cup
Recipe:
* Take cucmbers cut at their both ends, peel off the skin and wash properly.
* Cut into pieces of equal sizes as shown in video.
* Remove its seeds very carefully so that you dont break the cups.
* Fill it with moong..kala chana... tomatoes..onions.. sprinkle black pepper salt as per taste.
* Squeeze half a lemon.
* Garnish it with coriander leaves and sev..
