How To make Stuffed Cucumber Rings
2 lg Eggplants
A little oil 1 oz Flaked almonds
1 sm Onion, finely chopped
1 Garlic clove, crushed
1 tb Fresh parsley, chopped
Salt & pepper 1 Cucumber
1 Lettuce
1 lb Tomatoes, sliced
Lemon wedges Parsley sprigs Preheat oven to 400F/200C. Slice eggplants in half & rub oil lightly over the skin. Place face down on a greased tray & bake 1 hour. Leave to cool. Scoop out the insides & blend with the almonds, onion, garlic & parsley. Season well & chill thoroughly. Cut cumcumber into 8 x 1 inch rounds. Scoop out the middle of each round to form a small case, be careful not to cut all the way through. Either leave the cases raw or blanch in boiling water for 5 minutes. Fill cucumber chunks with the eggplant pate. Line a serving platter with lettuce & edge this with tomato slices. Put cucumber cases in the centre & garnish with lemon & parsley. Cucumber & Cheese Rolls
Ingredients:
1 cucumber
100 grams vegan white cheese
finely chopped red bell pepper
fresh dill
Preparation
In a medium bowl, add in cheese & mash
Add in finely chopped bell pepper & dill
Stir all ingredients to combine.
Using a vegetable peeler or mandoline, peel the cucumbers lengthwise into thin slices.
Spread a small spoonful of filling over a cucumber slice.
Starting from one end, roll the cucumber into a spiral. Repeat with remaining cucumber slices and filling.
Cucumber Avocado Rolls
Ingredients
1 Avocado
½ of a lime
salt
black pepper
1 cucumber
1 medium-size carrot( finely slice into strips)
red & yellow bell pepper( finely slice into strips)
Instructions
Into a mixing bowl, add the avocado & lime juice.
Mash with a fork. Season with salt & pepper.
Use a mandoline or potato peeler to cut long thin strips from the cucumber. Take a cucumber strip and spread a thin coat of the avocado mixture along the length of the cucumber. Roll it up needed.
Do the same with the rest of your cucumber strips.
