How To make Oatmeal Fudge Cookies
3 c Rolled oats
1 t Vanilla extract
1 c Nuts, chopped (optional)
2 c Sugar, granulated
1/2 c Cocoa powder
1/2 c Evaporated milk
1/4 lb Butter
Combine oats, vanilla and nuts in a bowl and set aside. Combine sugar, cocoa and evaporated milk in a heavy, 2-quart sauce pan. Bring to a full rolling boil over
medium-high heat, STIRRING CONSTANTLY. Let boil, while stirring, for 2 minutes. Remove pan from heat and add the butter. Stir until butter is melted and incorporated. Quickly add oat mixture to pan and stir until well mixed. Drop by the spoonful onto waxed paper. Let cool for 2 hours to set. NOTES: * No-bake chocolate oatmeal cookies -- This may be my all-time favorite cookie recipe. I don't remember where I got this particular version of the recipe but I remember my great-aunt making these cookies for us as kids. * My great-aunt never put nuts in these cookies. I like nuts but I find that they get lost in the recipe. If you want the oats to be less prominent, use quick-cooking oats. They will fall apart somewhat in the final mixing. * A heavy sauce pan makes burning the fudge less likely but stir, stir, stir, anyway. * The cooking time at boil is important. Makes 18 cookies
Ingredients:
2 cups (160g) Quick oats
3/4 cups (67g) Rolled oats
180g (6.3oz) Dark chocolate
1½ cups + 1 tablespoon (375ml) Coconut milk
2 tablespoons (25g) Sugar (white or brown)
1/4 teaspoon Salt
1 teaspoon Vanilla extract
Directions:
1. Line two baking sheets with parchment paper and set aside.
2. Chop the chocolate and place in a heatproof bowl.
3. In a small saucepan place coconut milk, sugar and salt, bring to a simmer, turn the heat off and pour over chopped chocolate, add vanilla extract, let sit for 2 minutes, then stir until chocolate is melted and smooth.
4. Immediately add oat and stir until combined.
5. Using a cookie scoop or two spoons drop mixture onto lined baking sheets.
6. Let cool to room temperature, then refrigerate until set, about 1-2 hours.

In this #shorts video I show you how to make one of my family's favorite cookie. These No Bake cookies are super easy and soooo good! You can't go wrong with peanut butter and chocolate and with the oats it makes these healthy, right?
No Bake Cookies
Ingredient
1 stick of butter
1/2 cup milk
3 Tbsp cocoa powder
2 cups sugar
1 tsp vanilla extract
1/2 cup peanut butter (creamy or crunchy)
3 cups old fashioned oats (if you use quick oat use 2 1/2 cups)
Instructions
In a large pot add butter and milk. Once butter is melted add sugar and cocoa. Stir until combined and bring to a boil. As soon as you see small bubbles along the edge of the pot, set a timer for 2 minutes. After the 2 minutes remove from heat and add the rest of ingredients. Immediately drop spoonfuls onto parchment paper as the cookies set up fast.

This is the CLASSIC No Bake Cookie recipe with oats, chocolate and peanut butter. It's no fail and perfect when you don't want to bake - they taste like a chewy peanut butter cup!

INGREDIENTS
1/2 cup unsalted butter diced
2 cups granulated sugar
1/2 cup nonfat milk
1/4 cup unsweetened cocoa powder
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
1/4 teaspoon salt
3 cups quick cooking oats
INSTRUCTIONS
Line two cookie sheets with parchment paper.
It’s very important that all your ingredients are measured and ready to go before you start and make sure you’ve read the directions before making these cookies. The process goes fast!
Melt the butter in a 3 quart saucepan over medium heat. Stir in the sugar, milk, and cocoa powder. Whisk until smooth then bring to a boil and cook for about 1 ½ minutes, stirring occasionally. NOTE: you MUST boil them long enough or they will not set. To be sure of this, boil the mixture until it reaches 230°F on a candy or instant read thermometer. If you do not have a thermometer, this will take about 1 ½ minutes on medium heat.
Remove from heat and stir in peanut butter, salt, vanilla, and oats.
Use a cookie scoop to drop 2 tablespoon size balls of cookie mixture onto the prepared baking sheets. Let sit to set or chill to harden quicker.

Easy, sweet No bake Chocolate Peanut Butter Oatmeal Cookies are so simple to make in just minutes! This cookie is a slightly healthier alternative to flour based-cookies and has an extra protein punch from the oats. This recipe is gluten free and can be made vegan if you swap the butter and milk for plant based alternatives.

Ingredients
▢ 1 1/2 cups sugar
▢ 1/2 cup milk
▢ 8 tablespoons unsalted butter
▢ 1/4 cup unsweetened cocoa powder
▢ 3 cups old-fashioned rolled oats
▢ 1 cup smooth peanut butter
▢ 1 tablespoon pure vanilla extract
▢ 1/8 teaspoon kosher salt
Line a baking sheet with wax paper or parchment.
Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute. Remove from the heat.
Add the oats, peanut butter, vanilla and salt, and stir to combine.
Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes.
Refrigerate in an airtight container for up to 3 days.
