Here's the recipe for Chicken and Broccoli Casserole:
Ingredients:
2 chicken breasts (or 4 chicken thighs), cooked and chopped
4 slices of bacon, chopped
1 package of penne pasta, cooked
2 cups of broccoli, chopped
4 tbsp bacon grease (or use butter if you don't have enough bacon grease)
1/4 cup all-purpose flour
2 1/2 cups milk
1 tbsp mushroom base (or chicken/beef/vegetable base)
A lot of garlic
1 tsp black pepper
1/2 tsp red pepper flakes
1 tsp salt
1 cup shredded cheese
Instructions:
Cook chicken and bacon, set aside and let cool. Once cooled, chop chicken into small pieces.
In the same skillet, add 4 tbsp bacon grease (or butter if needed) and stir in 1/4 cup flour to make a roux.
Gradually add 2 1/2 cups of milk, stirring constantly to prevent lumps.
Add 1 tbsp mushroom base, garlic, black pepper, red pepper flakes, and salt. Continue to stir and bring to a simmer.
Add chopped broccoli to the skillet and let cook for 3-4 minutes in the sauce.
Remove from heat and add half of the shredded cheese and stir.
Add cooked pasta to the skillet and mix everything together.
Top with chopped chicken and remaining shredded cheese.
Broil in the oven until cheese is melted and bubbly.

Creamy Chicken and Broccoli (Low-carb / Keto)
????Cheesy garlic chicken bites cooked in one pan with broccoli and spinach in under 15 minutes. This quick tasty dish is a great keto option and can be served with rice, zoodles or Pasta!
✳️ Ingredients ✳️
1 pound chicken breasts cut into 1'' pieces
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon crushed pepper optional
salt and pepper to taste
3-4 cloves garlic minced
1/2 cup tomatoes chopped
2 cups broccoli florets
2 cups baby spinach
1/2 cup shredded cheese mozzarella, cheddar, parmesan, or favorite melting cheese
4 oz cream cheese
✳️ Instructions ✳️
Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season with Italian seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and cooked through.
Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for another 3-4 minutes or until the broccoli is cooked through.
Serve with cooked pasta, rice, zucchini noodles or cauliflower rice.

Creamy, saucy, cheesy and not too heavy. This easy 35-minute chicken and broccoli pasta bake is the perfect weeknight comfort meal!
With just 540 calories per serve, I'd even go as far as claiming this is a fairly 'healthy' pasta bake! I mean, it's got lots of broccoli and lean chicken breasts!
The generous amount of creamy white sauce (a light bechamel sauce) in this recipe means there is no chance this pasta bake will turn out dry.
