2 Cans Cream Of Chicken Soup
1 C Chicken Broth
1/2 Tsp Curry Powder
Cheddar Cheese -- Shredded
Prepare Rice-a-Roni by package instructions, using 2 1/2 cups water. Layer in casserole dish as follows: Rice-a-Roni, broccoli and chicken. Mix soup, broth and curry powder. Pour over casserole and top with cheese. Bake at 350' for 45 minutes.

Easy & Healthy Chinese Chicken & Broccoli Stir Fry ~ Chinese Wok Recipe
INGREDIENTS
1 large sliced chicken breast
2 cups broccoli florets
1 sliced carrot
oil
water
slurry - equal water and starch
Chicken marinade:
2 tbsp. soy sauce
2 tsp. rice wine
1 large egg white
1 1/2 tbsp. cornstarch
Sauce:
1/2 to 3/4 cup chicken broth
2 tbsp. oyster sauce
2 tsp. dark soy sauce
3 cloves minced garlic
1 -2 tsp. minced ginger
white pepper
drizzle sesame oil
Prepare all ingredients before cooking.
Mix chicken, soy sauce, rice wine, egg white and cornstarch. Cover and refrigerate for 30 minutes.
Mix all ingredients for sauce and whisk well.
Blanch broccoli florets and carrots.
When water comes up to a light boil add chicken and give one or two pushes so not to stick together. Blanch for about 2 minutes and remove.
Clean wok and add sauce. Bring up to a simmer for one minute.
Add chicken, broccoli, carrots and slurry.
Stir until thickened and all chicken and veggies coated.
Remove from heat immediately.
Serving with rice. Enjoy.

Let’s make an easy chicken and broccoli stir fry that tastes better than takeout! This chicken and broccoli recipe is ready in one pot and tastes less than 30 minutes from start to finish! Try this delicious chicken stir fry for your weeknight meals or meal prep in advance to enjoy through the week!

RECIPE (2 servings)
INGREDIENTS:
1 lb/450g chicken breast
1 large/2 small heads broccoli
1 tbsp ginger finely chopped
1/2 tbsp garlic finely chopped
1/2 tsp salt
1 tbsp cornstarch
—stir fry sauce—
2 tbsp oyster sauce
2 tbsp soy sauce (light/regular)
1/2 tbsp dark soy sauce
1 tsp sugar
1 tbsp cornstarch
1/2 cup water
—pickled broccoli stem—
1 cup water
4 tbsp vinegar (any kind)
1 tbsp salt
1 red chilli (optional)
METHOD:
1. Cut broccoli florets into bite sized pieces and soak it in a mixture of water with 1 tsp baking soda for 15-30 mins. This will clean the broccoli thoroughly. Once soaked, rinse it with clean water
2. Cut the chicken into bite sized pieces and coat with 1/2 tsp salt, 1 tbsp cornstarch and set aside for 15-30 mins
3. While the chicken is marinating, let’s make pickled broccoli stem! Cut the hard base and peel the tough outer layer of the broccoli stems. Thinly slice and cut into matchsticks
4. Prepare a brine with water, vinegar, salt and chilli. Add the broccoli stems and let it marinate until the dish is cooked
5. Combine ingredients for the stir fry sauce in a bowl. This makes it very easy while cooking
6. To a pan/wok on high heat, add 3 tbsp oil and stir fry the chicken until its cooked though (about 5-6 mins). Check a big piece of the chicken to see if its done and set them aside
7. To the same pan add broccoli florets and stir fry on high heat until lightly charred. The light char adds a lovely smoky aroma
8. Add some oil if needed and stir fry ginger and garlic for 1 minute
9. Pour in the sauce and stir for 1 min for crunchy broccoli and 3 mins for soft/tender broccoli
10. Add the chicken and stir fry for 1 minute
11. For more sauce, add 1/2 cup water + 1 tsp cornstarch. Taste and adjust salt as needed
12. Serve it with rice and pickled broccoli stem

SUBSTITUTES:
• No oyster sauce?
Sub 1.5 tbsp regular soy sauce + 0.5 tbsp sugar
Hoisin sauce also works well
• No dark soy sauce?
Skip it
• No vinegar?
Lime juice works too
• No fresh red chilli?
1 tsp red chilli flakes for too

TIPS:
• Don’t overcook the chicken. It should not take too long to cook small pices of chicken breast
• Taste and adjust seasoning as needed
• There is no spice added to the stir fry as the pickled broccoli stem will be spicy. If you don’t want to make it, add a bit of chilli/pepper to the stir fry
