CRUMB TOPPING
1/2 c Sugar 1/4 c Flour 1/2 ts Ground cinnamon 1/4 c Butter Sift together flour, baking powder and salt. Cream together butter and sugar. Add egg and milk to butter mixture and beat until smooth. Add dry ingredients; fold in blueberries. Spread in a greased and floured 8 or 9 inch cake pan. Make topping by cutting the ingredients together until it forms course crumbs. Lemon, Blueberry and almond 'teacake' (makes 12x)
cake butter 190g unsalted butter, at room temperature, cubed , plus extra for greasing 190g caster sugar 1 tsp finely grated zest of 1 lemon 4 Large eggs 190g. ground almonds 45g. plain flour, plus extra for dusting 1/4 tsp baking powder 1/8 tsp salt 60g lemon juice 100g blueberries, plus an extra 70g to garnish

160g icing sugar 35ml lemon juice

Blueberry cake recipe • 2 cups of PLAIN FLOUR • 1 cup CASTER SUGAR • 1/2cup OIL (VEGETABLE OR SUNFLOWER) • 1 cup MILK • 2 EGGS • 2 tea spoons BAKING POWDER • Blueberries Use the same size cup for all ingredients. 1. Blueberry Tea Cake makes a wonderful mid-afternoon snack with a cup of your favourite tea or coffee. I love this cake because it’s not overly sweet and the fresh flavour of the blueberries. I also love that his cake is made without butter and with pantry staples! So good, but so simple.

This cake is one of the easiest cakes to make. There is little that can go wrong if you follow the recipe. This recipe contains no butter, does not require a beater - such a super simple cake that is great start for beginners.
