How To make Spicy Sauteed Shrimp
12 To 18 jumbo shrimp
1/2 c Pumpkin seeds (pepitas in
-Mexican markets) 1 sm Onion, cut into chunks
3 Garlic cloves
1/2 bn Fresh cilantro, leaves only
1 lg Tomato, peeled, cut into
-chunks 3 To 4 dried hot chiles *
1 Red bell pepper, cut into
-chunks 1/2 ts Coriander seeds
4 tb Olive oil
Clam juice, if needed Juice of 1 lemon * such as pequin, coarsely crushed (or 1 or 2 fresh chiles, such as jalapeno or Serrano, coarsely chopped, with the seeds, if you like your food hot) This is from Narsai David, a cosmopolitan Lebanese restauranteur, food writer and all-around nice guy from the Bay Area. Clean, peel and devein the shrimp. Set aside. To make the sauce, prepare the pumpkin seeds first. If they are unroasted, put them in a heavy skillet with out oil or butter and toast them for a few minutes until they are crackly but not browned. Put them in a food processor or blender and reduce to a fine powder. Add the onion, garlic, cilantro, tomato, chiles, bell pepper, coriander seeds, and salt and pepper. Puree until smooth. Heat 2 tablespoons of the olive oil in a skillet, add the pureed pumpkin seed mixture, and cook gently for a few minutes, stirring from time to time, until it is well blended. If too thick, stir in a little clam juice; if too thin, continue to cook until it is reduced to the desired consistency. Heat the remaining 2 tablespoons olive oil in a large skillet, add the shrimp, and saute over moderate heat until just beginning to turn pink. Using a slotted spoon, remove from the pan to a heated platter. Add the sauce to the pan. Add the lemon juice and adjust the seasoning. RECIPE
INGREDIENTS:
220g/0.5 lb shrimp (peeled and deveined)
4-6 garlic cloves
2 scallions/spring onions
1 tbsp butter
1/2 tsp red chilli flakes
1/2 tsp sesame oil
1 tsp sesame seeds
—sauce—
1/4 cup water
2 tbsp light soy sauce
1/2 tbsp dark soy sauce
1 tsp sugar
1 tsp vinegar
1 tsp cornstarch
PROCESS:
1. Marinate 220g/0.5 lb shrimp with 1/4 tsp salt for 10 minutes
2. In the meantime, mince 4-6 cloves of garlic and white part of 2 scallions/spring onions. Thinly slice the green tops
3. Mix the sauce ingredients and set aside
4. On high heat, fry shrimp with some neutral cooking oil until almost cooked. They should be done in 1-3 minutes, depending on the size of the shrimp
5. Reduce flame to low, sauté garlic and scallion in 1 tbsp butter until lightly golden
6. Pour in the sauce and simmer until it thickens. Add 1 tsp crushed chilli flakes for some spice
7. Once the sauce has thickened to your liking, add the fried shrimp and heat it for 1 minute
8. Switch off the flame and add 2 tbsp honey, 1/2 tsp sesame oil and mix well. Garnish with scallions/spring onion and sesame seeds
9. Serve honey garlic shrimp with hot steamed rice. Mix everything well and enjoy!

SUBSTITUTES:
• No scallions/spring onions?
Leeks or regular onions can be used
• No dark soy sauce?
Skip it
• No red chilli flakes?
Substitute with some chilli powder, chilli sauce or skip it
• No butter?
Cooking oil works too

TIPS:
• Don’t overcook the shrimp or they’ll get rubbery
• Use unsalted butter as the shrimp is salted and the sauces have salt
• If it ends up being too salty, add some vinegar and some more honey. This should balance it out
• Adjust the sauce to your liking as different brands have different flavors

2 lbs Jumbo or XL Shrimp (cleaned with tails on or off.. your choice lol)
1 stick of butter
1-2 tbsps capers
1 diced shallot
1 lemon (zest and juice)
1 cup dry white wine
1/4 cup diced parsley
2 tbsps Roasted Garlic
1 tsp chicken bouillon
salt, pepper, garlic, onion powder, chili flakes
Serve with White Rice, Pasta Noodles, Garlic Bread, or w/ Salad
Garlic Bread:
1/2 loaf french bread
1 stick melted butter
1/4 cup diced parsley
2 tbsps roasted garlic
1/4 cup grated parmesan cheese
red pepper flakes to taste
AP Seasoning to taste
SPICY CAJUN SHRIMP WITH GARLIC BUTTER SAUCE
This spicy cajun shrimp is made with corn on a cob, potatoes, sausage and hot savory garlic butter sauce. It’s delicious and finger licking good. I made a lighter-healthier version. It is easy to make and so much cheaper than eating out. You can put as many corn and potatoes as you like. Lol
The sauce is perfect for crawfish as well. It’s a must try this recipe!
2 lbs shrimp 907g
2 Andouille sausages-thick sliced
2 Ears corn fresh or frozen-cut in half
4 Baby potatoes
1 1/2-2 tbsp cajun seasoning
2 tbsp cayenne pepper or paprika if you don't like it so hot
2 tbsp Chicken bouillon
1 tbsp lemon pepper
1 tbsp garlic powder
2 heads garlic-chopped
1 stick butter
3/4 cup water or olive oil
Boil potatoes and corns for 15-20 minutes or until potatoes folk tender.
If you want it more rich and buttery use 2 sticks of butter instead of water.
Cajun seasoning can be salty-add a little at a time and taste the sauce.
