How To Make Swedish Meatballs with Emma Bengtsson
Chef Emma Bengtsson from Aquavit in NYC shares her Swedish meatballs recipe that puts IKEA’s to shame. Emma’s meatballs, made from pork and beef, are rolled small and pan fried, and paired with pureed potatoes, pickled cucumbers, lingonberries, and a sauce made with cream and veal stock. This flavor-packed recipe is sure to keep you warm through the cold winter months.

Swedish Meatballs????
Ingredients:
Meatballs
- 1/2 lb ground beef
- 1/2 lb ground pork
- 1 yellow onion
- 1/4 cup breadcrumbs
- 3 tbsp whole milk
- 1 egg
Cream Sauce
- 1 cup water
- 2 tbsp flour
- 1 cup whole milk
- 1 tbsp soy sauce
Mashed Potatoes
- 3 large Yukon Golds
- 1/2 cup whole milk
- 4 tbsp butter
- Chives
Swedish Lingonberry Jam
- just buy that shit (World Market, IKEA, etc.)
Method:
1. Grate an onion. Extract excess moisture. Place in large mixing bowl.
2. Add 1/2 pound each of ground beef & ground pork.
3. Sprinkle in salt, pepper, and breadcrumbs, and crack in an egg. Combine and form meatballs. **TIP: wet your hands before forming balls.
4. Peel and cube 3 large potatoes.
5. Brown meatballs in butter. Placing clockwise distinguishes which balls need to be turned first. After an initial flip, simply keep jostling the pan to brown all sides evenly.
6. Turn the heat to low. Remove meatballs. Add a cup of water to the fat and fond remaining in the pan, and whisk to loosen any stuck-on bits. Cook for a few minutes to reduce to a broth.
7. Strain broth. Transfer to a saucepan, on low heat. Add 2 tbsp of flour, whisking intermittently. Then, slowly add 1 cup of whole milk (whisking all the while). Cook until the sauce thickens and becomes glossy, so that you can run your finger clean through it on the back of a spoon. Season to taste with salt, pepper, and a splash of soy sauce.
8. Add chopped potatoes to boiling water. Cook until you can pierce effortlessly with a pairing knife. Strain.
9. Add butter, milk, salt, pepper. Mash.
