How To make Black Bean Soup with Jalapenos
8 Jalapeno chiles
stems and
removed :
chopped 1 tablespoon Dried crushed red chile seeds included
2 cups Black beans :
sorted and
=09 2 tablespoons Bacon fat or vegetable oil
2 medium Onions chopped
40 milliliters Garlic :
minced
1 large Ham hock
1 cup Canned tomatoes -- chopped
2 teaspoons Ground cumin
1 teaspoon Ground epazote (optional)
1 teaspoon Ground coriander
1/4 teaspoon Ground cloves
1 tablespoon Red wine vinegar
cups water 3 tablespoons Tequila (optional)
Sour cream for garnish
Cover the beans with water and soak overnight, or quick soak them.
Saute the onion and garlic in the bacon fat until soft.
Combine all the ingredients, except the tequila and sour cream, in a large pot and bring to a boil. Reduce the heat and simmer for 2-3 hours or until the beans are soft.
Remove the ham hock and shred the meat.
Divide the soup in half, puree half of it and add back to the reamining soup. Add the shredded meat and simmer for 15 minutes or until thickened to the desired consistency.
Remove from the heat, stir in the tequila, garnish with the sour cream, and serve.
Serving Suggestions: Serve as a lunch entree with warmed flour tortillas and a citrus salad.

flavor packed black bean soup
For the recipe I did
1qt cooked black beans
1qt chicken stock
1 red onion
2 carrots
1 celery
6 garlic
2 jalapeños
2 tbsp chipotle powder
1 tbsp red chili powder
2 tsp cumin
2 tsp coriander
1 tsp oregano
Salt pepper and lime juice
Black Bean Soup
Yield: Approximately 1 gallon
6 cans Black Beans (15oz. can), drained & rinsed
1 lbs. Chorizo, Andouille, Bacon or Ham - optional
2 cups Red Onions, small dice
2 cups Red Peppers, small dice
1 Jalapeno, minced
2 cups Tomatoes, small dice
1 cup Cilantro, rough chop
½ cup Lime Juice
4 Tbsp. Chef Joe’s Tex-Mex Rub* (see notes)
1 quart Vegetable, Ham or Chicken Stock
2 Tbsp. Garlic, minced
Procedure:
1. *If using meat, begin with preheating a sauce pot over medium heat and olive oil to render fat. Once fat is rendered, remove the meat and reserve for later.
2. Sauté half of the onions for about 3 minutes, add garlic. Continue to cook, then add half of the red peppers. Cook slightly, then add jalapeno.
3. Add black beans and Tex-Mex seasoning. Stir and add stock
4. Bring to a simmer then add remaining onions, peppers and tomatoes. Season with salt
5. Bring back to a simmer and cook for approximately 15 minutes.
6. Remove some of the soup and transfer to the pitcher of a variable speed blender. Process until smooth. Add it back to the pot.
7. Add meat if using and simmer for 10 minutes more.
8. Finish with lime juice & fresh cilantro
Notes:
• Tex-Mex Rub - (1 oz. each: Cumin, Coriander, Granulated Garlic, Granulated Onion, Dried Cilantro & Black Pepper; 1.5 oz. each: Chili Powder, Hungarian Paprika & ¼ oz. Cayenne Pepper)
• For a spicier soup either add more jalapenos or substitute with serrano or habanero
• Quesadilla is a perfect side dish for this soup

I hate having to cook before each meal. This is probably why I typically have one big meal prep day a week, followed by heating up leftovers from the prep day. I don't remember to start cooking soon enough and am left starving by the time I think of making something. That's why I love slow cooker meals. This is a super flavorful one that I was able to put on overnight to have ready in the morning, but you could also throw it on in the morning to be ready for supper.
