Bobotie Recipe on the braai | South Africa's National dish | Traditional South African recipes |
Bobotie (pronounced ba-bo-tea) is South Africa's National dish. This flavorsome dish consists of minced meat, dried fruits, curry-inspired spices, and peach chutney. Covered with flaked almonds, fresh bay leaves, and a golden egg and milk topping. Baked in a wood-fired oven until all the flavors mingle together.
Recipe
∙ 1.3Kg Beef mince
∙ Canola oil
∙ 3 onions
∙ 1 tablespoon Garlic
∙ 100grams dried Apricots
∙ ½ cup seedless raisins
∙ ½ cup peach chutney
∙ ¼ cup brown vinegar
∙ 3 slices white bread
∙ ½ cup milk
∙ ½ cup Almond flakes
∙ 1½ cup beef stock
∙ Salt & pepper
Spices
∙ 2 tablespoons Mild curry powder
∙ 1 teaspoon HOT curry powder
∙ ½ tablespoon dried ginger
∙ 2 tablespoons Turmeric
∙ 1 teaspoon cinnamon
∙ ½ tablespoon dried coriander
∙ 1 teaspoon Allspice
Custard
∙ 300ml milk
∙ 3 eggs
∙ Bay leaves

Crispy Bobotie Cups
A delicious snack or light meal idea that your friends/family will love????????✨
Ingredients:
For the bobotie filling:
1 slice white bread
½ cup (125ml) milk
10ml oil
½ onion, finely chopped
250g beef mince
1 tsp curry powder
½ tsp salt
½ tsp pepper
2 tsp sugar
1 tbsp vinegar
1 tbsp chutney
½ cup (125ml) water
¼ cup seedless raisins (optional)
For the egg layer:
2 eggs, beaten
60ml cream
Salt and black pepper, to taste
30g butter, melted
For the crispy rice cup:
1 cup Spekko Long Grain White Basmati Rice
2 ½ cups water
1 cup yoghurt
3 egg yolks
Salt
Method:
Prepare the rice cups:
1. Cook rice according to the pack instructions.
2. Mix the yogurt and egg yolks together. Add them to the rice & mix. Set aside.
3. Soak bread in the milk.
4. Heat the oil in a saucepan and fry the onion until soft. Add the mince and fry until well browned.
5. Stir in the curry powder and season with salt and pepper. Squeeze the milk out of the bread and crumble the soggy bread into the mince.
6. Add the sugar, vinegar, chutney, raisins and ½ cup water to the mince. Stir and allow it to simmer for 10 minutes or until the mince is cooked and the mixture is almost dry, but still moist.
For the egg layer:
1. Whisk the eggs, cream, remaining milk from the soaked bread, salt, pepper and butter together until well combined.
Assembly:
1. Spoon the rice into a greased muffin tray, spread it evenly but not too thinly, pressing up the sides.
2. Bake for 30 minutes at 180°C and remove from the oven.
3. Add a generous spoonful of mince into each rice cup and smooth the top, keeping enough space at the rim of the cup for the custard topping.
4. Pour the custard over the top of each bobotie cup and top with a bay leaf.
5. Allow to stand for 5 minutes and bake for a further 10 minutes or until the custard has set. Serve and ENJOY!
FAMILY RECIPE | South African Bobotie
Bobotie is a traditional South African dish. It has a warm and fruity flavour. Beautifully delicious.
Ingredients:
6 tbsp/60g Butter
3 medium Onions, diced
2 tbsp/20g Ground Ginger
2 tbsp/20g Crushed Garlic
3 tbsp/43g Brown Sugar
3.5 tbsp/30g Curry Powder
1 tbsp/10g Tumeric
1 tbsp/ 10g Salt
3 Cinnamon Sticks
1 tsp/5g Clove Powder
1 tbsp Black Pepper
2 tbsp Lemon Juice
1/2 cup/150ml Water
1kg/2.2lbs Ground Beef/Beef Mince (lean)
2 slices of Bread
About 1/2 cup Milk
1 tbsp/10g Vegetable Oil
1/4 cup/45ml White Vinegar
1/4 cup/45ml Worcestershire Sauce
6 tbsp/60g Fruit Chutney
2 tbsp/20g Tomato Paste
1/2 cup Raisins/Sultanas (seedless)
2 Eggs
Custard/Topping
1.5 cups/270ml Milk
3 Eggs
+- 6 Bay Leaves
Method:
Over a medium heat, melt the butter, then add the onions and saute, stirring occasionally. When the onions are soft/translucent, add the ground ginger, crushed garlic, brown sugar, curry powder, tumeric, salt, cinnamon sticks, clove powder and pepper and stir well. Turn the stove down to medium to low heat. Add the lemon juice, water and ground beef/mince and stir well. Close the pot and cook for 10 minutes.
Set your oven to 180C/356F.

Remove the crust from the bread and soak in milk, then strain. Add the bread, oil, vinegar, worcestershire sauce, fruit chutney, tomato paste and raisins/sultanas to the mince mixture and stir well, combining all the ingredients. Still on a medium to low heat, close the pot and cook for 10 minutes, stirring occasionally. Then turn off the heat, and place the bobotie into an oven-proof dish, omitting the cinnamon sticks and as much of the liquid as possible. Whisk 2 eggs and pour over the bobotie, and mix a little, as this will solidify the bobotie. Cover with foil and bake in the oven for half an hour.
To prepare the custard/topping, whisk the milk and eggs together. Remove the bobotie from the oven, and pour the custard over, then spread the bay leaves on top of the custard. Then bake uncovered for 25 minutes, until the custard has set or is lightly browned.
Remove from the oven. You can serve with yellow rice, mash, roasted vegetables, potato or green salad.
