How To make Zucchini Chili
6 tb Olive oil
1 1/2 c Zucchini, cut into 1/2-inch
cubes (about 2 small) 1 c Onion, yellow :
coarsely
chopped 2 Garlic cloves :
crushed
1 c Green pepper -- cut into 1/2-
inch cubes 2 c Tomatoes, canned :
crushed
1 tb Chili powder
1 1/2 ts Cumin
1 1/2 ts Oregano dried
1/4 c Parsley, fresh :
minced
Salt and pepper to taste 2 c Beans, canned (Kidney and/or
garbanzo) :
drained
Heat olive in a large skillet. Add zucchini, onion, garlic and green pepper. Saute 10 minutes until softened. Transfer to a saucepan and add tomatoes, chili powder, cumin, oregano, parsley, salt and pepper. Cook over low heat, uncovered, for 10 minutes. Stir in beans and cook 10 minutes more on low heat. Adjust seasonings. Serve chili rolled up in a warm flour tortilla or on a bed of brown rice. Serves 4. Variation: Substitute unpeeled medium eggplant, cut into 1/2-inch cubes, for the zucchini. 1 Tablespoon (15 ml) vegetable oil
1 inch (2.5 cm) knob of ginger , peeled and minced
3 cloves garlic , minced

2 teaspoons (10 ml) soy sauce

Super easy and additive Sichuan style hot Zucchini stir fry.
--------------Ingredients--------------
2 zucchini
1 tbsp. salt
1/2 tbsp. doubanjiang
1 tbsp. cooking oil
50 g pork belly slices
2 garlic cloves , chopped
1 thumb ginger , chopped
3 scallion , cut into sections
4 fresh chili pepper , cut into circles
1 tbsp. oyster sauce
1/2 tsp. sugar

TURKEY ZUCCHINI SKILLET RECIPE
1 pound ground turkey
4-5 cloves of garlic, chopped
1 onion, chopped
4 small-medium zucchini, cut into quarters then chopped
2-15 ounce cans of diced tomatoes
1 heaping tablespoon Italian seasoning
1 tablespoon olive oil
Salt and pepper to taste
Parmesan cheese and red pepper flakes (*optional toppings)
DIRECTIONS:
Heat a large non-stick skillet over medium heat and add oil. Once the olive oil is hot, stir in your onions and garlic along with a pinch of salt. Let them cook for a couple minutes or so or until your onions are fragrant and beginning to look translucent.
Push all the veggies to one side of the pan and then using a wooden or rubber spatula, stir in your ground turkey. Season the turkey with some salt and pepper be sure to break it up into small pieces.
Once the turkey has lost it's pink color, begin to combine the ground turkey with the onions and garlic.
Add in zucchini, oregano, a little more salt and pepper, and tomatoes. Give it a good mix and allow everything to simmer for 15-30 minutes depending on how soft you like your zucchini.
Serve over a bed of spaghetti squash (or pasta, rice, cauliflower rice, etc) and top with some red pepper flakes and parmesan cheese. Enjoy!

The Spicy Zucchini Pasta I Can't Stop Eating
This spicy roasted zucchini pasta with Calabrian chili paste, mozzarella, Pecorino Romano, and fresh herbs in a simple garlicky tomato sauce is so good and so easy! It is very similar to the pasta alla Siciliana that we made a few episodes ago. Watch that one too! I hope you enjoy this spicy roasted zucchini pasta.

SPICY ROASTED ZUCCHINI PASTA
INGREDIENTS
1 pound pasta - ziti, rigatoni, penne, etc
1/2 cup olive oil
1 28 ounce can high quality plum tomatoes
5 medium to small zucchini - seeds scooped out and cut into half moons
1 medium onion, diced
4 Cloves of garlic - sliced
2 cups smoked mozzarella - cubed
¼ cup Pecorino Romano cheese - grated
¼ cup packed basil leaves - chopped
¼ cup parsley - minced
1 teaspoon Calabrian chili paste - plus more to taste
Salt and pepper - to taste
1.Toss zucchini with a 1/4 cup of olive oil and spread out on a baking sheet. Sprinkle with salt and pepper and roast zucchini for 20-25 minutes at 450f on lowest oven rack or until well browned.
2. Meanwhile, bring a large pot of salted water (2 tablespoons kosher salt) to boil.
3. In a very large pan saute the onions in a ¼ cup of olive oil over medium-low heat until translucent (about 3- 5 minutes) then add the garlic and cook for 2 minutes more until golden. Add the Calabrian chili paste into the oil and cook for 30 more seconds.
4.Add the tomatoes to the pan and bring sauce to a simmer.
5. While the sauce is simmering, cook the pasta until al dente.
6.Taste test the sauce and adjust salt and pepper to taste. Add the pasta and roasted zucchini to the sauce and toss to coat. Cook for 60 seconds, then turn off the heat. If the pasta is too dry add a splash of pasta water. Add the basil and Pecorino Romano cheese and mix together.
7.Add the cubed mozzarella cheese. Toss once more and serve immediately with more Pecorino Romano and Calabrian chili paste on the side. Enjoy!
