Fresh, tender squash combines with cheddar cheese, sweet onion, and buttery round crackers for an unforgettably delicious bite. Create this silky crowd-pleaser at home with our top-rated recipe and a few tips from Nicole.
4 cups sliced yellow squash
½ cup chopped onion
35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter
Directions:
Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
Step 3
In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
Step 4
Bake in preheated oven for 25 minutes, or until lightly browned.

10c yellow squash, sliced
1 large onion, sliced
4c chicken or vegetable stock
2c water
4 oz. cream cheese, softened
1/4c mayo
1/2c sour cream
1 slightly beaten egg
1/2t garlic powder
1/2t onion powder
Salt and Pepper to taste
2c shredded cheddar cheese
1c shredded parmesan cheese
1 sleeve Ritz crackers
Paprika

✅Ingredients
• 1 tablespoon canola oil
• 3 pounds yellow squash, sliced
• 1 white onion, diced
• 1 teaspoon salt
• 8 ounces sour cream
• 1 cup shredded cheddar cheese
• 1/2 cup grated parmesan cheese
• 1 large egg
TOPPING:
• 1 sleeve Ritz crackers, crushed
• 2 tablespoons butter, melted
• 1/4 cup grated parmesan cheese
✅Instructions
1️⃣ Preheat oven to 350 degrees. Lightly grease a 9x9 baking pan or casserole dish.
2️⃣ 00:00:16 - Heat canola oil in a large skillet over medium high heat. Add in squash and onion and season with salt. Cooking, stirring frequently until squash just starts to soften and liquids have been released, about 7 to 10 minutes. Drain well.
3️⃣ 00:01:04 - In a large mixing bowl stir together sour cream, cheddar cheese, parmesan, and egg until well combined. Add in squash and gently fold until well coated. Pour into the prepared baking pan.
4️⃣ 00:01:55 - In another small bowl, toss together crushed crackers, butter, and parmesan cheese. Sprinkle over the top of the squash.
5️⃣ 00:02:25 - Bake at 350 degrees for 20 to 25 minutes, uncovered, until topping is lightly browned. Serve hot.
