The better than bakery SPONGE CAKE recipe you've been looking for! Light, airy, soft sponge cake

This better than bakery sponge cake recipe is light, airy, and just straight up DELICIOUS! It’s so versatile that you can pair it with literally anything. I love filling mine like a classic Victorian sponge cake with my homemade raspberry filling recipe and whipped cream – YUM!
HOW TO WHIP EGGS:
INGREDIENTS:
Sponge Cake
- ⅓ cup (40 g) flour - regular, all purpose (see note 1 on blog post)
- ½ cup (60 g) cornstarch
- ¼ tsp baking powder
- ¼ tsp salt
- 4 large eggs - whites and yolks separated
- ⅛ tsp white vinegar
- ⅔ cup (132 g) white granulated sugar - separated in half (1/3 for the egg whites & 1/3 for the egg yolk mixture)
- 1½ tbsp warm water - not boiling
- 2 tsp vanilla essence/extract
- 2 tbsp (30 g) unflavoured vegetable oil - I use canola
IMPORTANT: Cake tins must be ungreased (with only the bottom lined), and ensure the cakes are cooled upside down once baked. Bake at 160 °C (320°F) with the fan on for 25 minutes. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F).
Simple Syrup (I use about 3/4s of the quantity below to brush the cake)
- ½ cup (100 g) white granulated sugar
- ½ cup (110 g) boiling water
Whipping Cream
- 2 cups (375 g) cold whipping cream
- 2 tsp icing sugar - also known as confectioners sugar/powdered sugar
- ½ tsp vanilla essence/extract
- 1 punnet fresh strawberries for decorating - sliced in half

If you’re looking for a fluffy, moist marble cake that is going to WOW your family and friends, then this recipe is it! Soft layers of vanilla and chocolate cake are combined together and topped with a whipped chocolate ganache frosting – YUM! It comes together so easily using only one recipe that’s based on my 5 star rated vanilla cake recipe, which I promise will not disappoint!
INGREDIENTS:
Vanilla Cake
- 2¼ cups (300 g) flour - regular all purpose (see note 1 on blog post if you want to use cake flour)
- ¼ cup (25 g) cornflour - also known as cornstarch
- ½ tsp baking soda
- 1 tsp baking powder
- ½ tsp salt - omit if using salted butter
- ½ cup (113 g) unsalted butter - room temperature
- ½ cup (105 g) unflavoured vegetable oil - I use canola
- 1⅔ cups (332 g) white granulated sugar
- 3 large eggs - room temperature
- 1¼ tbsp vanilla essence/extract
- 1 tsp white vinegar
- 1½ cups (337 g) buttermilk - room temperature, see note 5 on blog post if using a homemade buttermilk substitute
Extra Ingredients for Chocolate Portion of Cake
- ⅓ cup (33 g) cocoa powder - unsweetened, Dutch processed preferred
- 1 tsp instant coffee powder
- 1 tbsp unflavoured vegetable oil - I use canola
Whipped Chocolate Ganache Frosting
- 3 cups (675 g) cream - minimum fat percentage of 34%
- 1⅔ cups (270 g) dark chocolate - I use 50% dark chocolate, semi-sweet okay too

3 QUICK and EASY WW CAKE MIX Dessert Recipes!???????????? (Weight Watchers) Lightened up WW friendly Desserts- In this video I show you 3 of my favorite quick and easy WW desserts that use cake mixes These are some of my go to desserts when I have a sweet tooth and want to whip something up quickly!

Pistachio Cake:
1 white cake mix
3 egg whites
3 1/2 cups diet Sprite (divided)
1 1 ounce package of sugar free instant pistachio pudding
8 oz of fat free whipped topping
cooking spray
1/4 cup pistachios, chopped (optional)
For the cake, Mix together cake mix, egg whites and 2 1/2 cups of Sprite, mix well in mixer or by hand. Spray an 9X13 pan with cooking spray and pour mixture in pan. Bake at 350 for 30-35 minutes. Let cool completely.
For the frosting, Mix together whipped topping, pudding mix and remaining soda until all incorporated. Evenly spread over the top of cooled cake and refrigerate for a couple of hours, overnight is even better! Top with chopped pistachios before serving.

Two ingredient Angel Food Dessert:
1 box Angel food cake mix (the just add water kind)
20 oz can of no sugar added cherry pie filling
Mix two ingredients together until well combined. Pour into an ungreased 13X9 inch pan and bake at 350 for about 30 minutes or until an inserted toothpick comes out clean.
Makes 12 servings. MyWW SmartPoints per serving - Green: 7 SmartPoints / Blue: 7 SmartPoints / Purple: 7 SmartPoints. (without whipped cream)
Triple Berry Crisp Dump Cake:
1 box yellow cake mix
1/2 cup rolled oats
1/4 cup pecans, chopped
1/2 cup light butter spread, melted (I like Brummel and Brown)
32 oz frozen berries (we like the Triple Berry blend)
Pour frozen berries into a 13X9 inch pan and set aside. Add remaining ingredients to a large bowl and mix well until a crumble texture is formed. Pour crumble over the top of the berries and bake at 350 for 50-60 minutes or until berries are bubbly and topping is slightly browned.

INGREDIENTS:
Sponge Cake
- 2 tbsp (15 g) flour - regular, all purpose (see note 1 on blog post)
- ⅓ cup (40 g) cornstarch
- ¼ tsp baking powder
- 2 tbsp (16 g) cocoa powder - unsweetened
- 1 tsp instant coffee powder
- ¼ tsp salt
- 4 large eggs - whites and yolks separated, room temperature
- ⅛ tsp white vinegar
- ⅔ cup (132 g) white granulated sugar - separated in half (1/3 for the egg whites & 1/3 for the egg yolk mixture)
- 1½ tbsp warm water - not boiling
- 2 tsp vanilla essence/extract
- 2 tbsp (30 g) unflavoured vegetable oil - I use canola
