These easy macadamia raspberry white chocolate cookies are a hit among adults and children. Especially for the sweet-toothed! With the fruitiness of the raspberries, crunchiness of the macadamia nuts and sweetness of the white chocolate chips, what more can we ask for?
Serve these cookies with your favourite jam, or simply dunk them into a cup of warm milk, and it will make the perfect tea time snack!
Ingredients
⅓ cup granulated sugar
⅓ cup brown sugar
⅓ cup butter
1 egg, large ????
1 tsp vanilla extract
¼ cup raspberry jam
1½ cup flour
1 tsp baking soda
1½ cup white chocolate chips
1 cup macadamia nuts, chopped

0:09 In a mixer, put granulated sugar, brown sugar, butter and mix.
0:35 When it’s fully combined, add egg and continue mixing.
0:41 Add vanilla extract and raspberry jam. Continue mixing until fully combined.
0:48 Sift flour and baking soda into the mixture.
1:03 Mix completely to form cookie batter.
1:06 Add white chocolate chips and macadamia nuts, stir to mix well.
1:13 Scoop the cookie dough onto the baking tray using an ice cream scoop.
1:16 Bake at 350 degF for 8 to 10 minutes.

INGREDIENTS: Makes a dozen cookies
1 1/2 cups all purpose flour
1 tsp baking soda
1/2 cup salted butter, softened
1/3 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1 tsp vanilla extract
1/2 cup macadamia nuts, chopped
1 cup white chocolate chips
DIRECTIONS:
1.) Preheat oven to 350 degrees.
2.) Sift flour and baking soda together, then set aside.
3.) In a separate bowl, use an electric mixer and beat together the butter, the sugars, egg, and vanilla extract. Mix together until smooth.
4.) Gradually add the flour mixture to the wet ingredients. Mix until incorporated, but avoid over mixing.
5.) Add the chopped macadamia nuts and white chocolate chips. Mix together with a wooden spoon.
6.) Use a 1/4 measuring cup to scoop the dough out. Roll it out into a ball and place them on lined baking sheets. Make sure they are 2 inches away from each other.
7.) Bake at 350 degrees for 15 minutes. Let the cookies cool for 5-10 min before serving.
