How To make Double Chocolate, Chocolate Chip Sandwich Cookies
1/4 c Unsalted butter
1 Unsweetened chocolate
3/4 c All-purpose flour
1/4 ts Baking powder
1/4 ts Baking soda
1/2 ts Salt; or 1 tsp
3 tb Packed light brown sugar
3 tb Sugar
1 1/2 ts Vanilla
1/4 c Sour cream or buttermilk
1 lg Egg; lightly beaten
1/4 c Finely chopped pecans
Or walnuts 1/2 c Semisweet chocolate

-m Recipe by: NATHALIE DUPREE COOKS SHOW#ND7129 Preheat oven to 375 degrees. In a small pan over low heat melt the butter and chocolate together. Meanwhile, mix the flour, baking powder, baking soda, and salt together. Cool the chocolate and pourinto the bowl of a mixer. Beat in both sugars, the vanilla, sour cream or buttermilk, and egg. Add the flour mixture, nuts, and chocolate chips and mix well. Grease cookie sheets. For 3-inch round cookies, drop the batter by teaspoonfuls onto the cookie sheet, leaving about 2 inches in between each cookie. Bake at 375degrees for 8 to 10 minutes. Do not let edges brown. For 42-inch round cookies, drop the batter by tablespoons, leaving about 2 inches between each cookie. Baking time will be 12 to 15 minutes. Use a
spatula to transfer the cookies to racks to cool. To make the ganache filling, melt the chocolate and butter in a small pan over low heat or in the microwave. Gradually whisk in the cream. Let stand at room temperature, stirring occasionally, for 1/2 hour or longer, until barely thickened. Or place the bowl in ice water if you are in a hurry, but don't let the filling harden. Turn half the cookies upside down on a large piece of wax paper. Spread a tablespoonful on each of the turned cookies. Quickly cover with the remaining cookies, right sides up, and press gently down to spread the filling to the edges. Let stand at room temperature or chill briefly until the filling is set. Makes 20 small or 9 large sandwiches -----

Double Chocolate Sandwich Cookies

We like our cookies best when they are made with bittersweet chocolate then sandwiched with a chocolate cream filling.
Equipment we used:
Glass bowls
Mixer
Bowl scraper
Spatula
Cookie press
Baking pan
Parchment paper
Whisk
Piping bag
Ingredients:
6 oz bittersweet chocolate (175g)
2 oz butter (50g)
2 eggs
9 oz sugar (250g)
2 oz flour (50g)
2 tsp baking powder
Pinch of salt
7 fl oz heavy cream (200g)
3 ½ oz semi-sweet chocolate (100g), chopped
Instructions:
Preheat the oven to 325°F(160°C).
Melt bittersweet chocolate and butter in a microwave and stir until smooth.
Beat eggs and sugar in large bowl with a mixer. Pour melted chocolate into the bowl.
Combine flour, baking powder and salt and then gradually add to the batter. Mix well.
Refrigerate for 30 minutes.
In saucepan, bring heavy cream to a boil and pour over chopped semi-sweet chocolate. Mix until smooth and set aside.
Line the baking pan with parchment paper.
Pour cooled batter in a cookie press. Press out 1 inch wide cookies onto the baking pan.
Bake for 10 minutes. Cool cookies completely.
Use a whisk to stir the chocolate cream. Pour into a piping bag with a small hole in it.
Pipe chocolate cream onto flat side of half of the cookies. Sandwich each with a second cookie.
Cool completely before serving.

You’ll need:
• 1 cup + 2 tbsp all-purpose flour
• ½ cup cocoa powder (dutched-processed preferred*)
• 2 tsp cornstarch
• 3/4 tsp baking soda
• 1/4 tsp salt
• 1/2 cup + 2 tbsp unsalted butter (room temperature)
• 2/3 cup light brown sugar
• 1/4 cup white sugar
• 1 medium egg
• 1/2 tsp peppermint extract
• 1 tsp vanilla
• 3/4 cup semi-sweet chocolate chips or dark
TOPPING:
• 6 oz. white chocolate bar
• crushed candy canes
Makes 18 cookies
* Using a 1.5 cookie scoop in the video
:: HELPFUL HINTS ::
* The recipe has a mild peppermint taste. If you prefer a robust peppermint flavor, use 1 tsp of the peppermint extract.
* Allow cookies to rest in the baking pan for 3-5 minutes. Transfer to wire rack to finish cooling completely.
