How To make Double Chocolate, Chocolate Chip Sandwich Cookies
1/4 c Unsalted butter
1 Unsweetened chocolate
3/4 c All-purpose flour
1/4 ts Baking powder
1/4 ts Baking soda
1/2 ts Salt; or 1 tsp
3 tb Packed light brown sugar
3 tb Sugar
1 1/2 ts Vanilla
1/4 c Sour cream or buttermilk
1 lg Egg; lightly beaten
1/4 c Finely chopped pecans
Or walnuts 1/2 c Semisweet chocolate
-mini-chips Chocolate ganache filling 3/4 c Semisweet or milk chocolate

-m Recipe by: NATHALIE DUPREE COOKS SHOW#ND7129 Preheat oven to 375 degrees. In a small pan over low heat melt the butter and chocolate together. Meanwhile, mix the flour, baking powder, baking soda, and salt together. Cool the chocolate and pourinto the bowl of a mixer. Beat in both sugars, the vanilla, sour cream or buttermilk, and egg. Add the flour mixture, nuts, and chocolate chips and mix well. Grease cookie sheets. For 3-inch round cookies, drop the batter by teaspoonfuls onto the cookie sheet, leaving about 2 inches in between each cookie. Bake at 375degrees for 8 to 10 minutes. Do not let edges brown. For 42-inch round cookies, drop the batter by tablespoons, leaving about 2 inches between each cookie. Baking time will be 12 to 15 minutes. Use a
spatula to transfer the cookies to racks to cool. To make the ganache filling, melt the chocolate and butter in a small pan over low heat or in the microwave. Gradually whisk in the cream. Let stand at room temperature, stirring occasionally, for 1/2 hour or longer, until barely thickened. Or place the bowl in ice water if you are in a hurry, but don't let the filling harden. Turn half the cookies upside down on a large piece of wax paper. Spread a tablespoonful on each of the turned cookies. Quickly cover with the remaining cookies, right sides up, and press gently down to spread the filling to the edges. Let stand at room temperature or chill briefly until the filling is set. Makes 20 small or 9 large sandwiches -----

Ingredients:
1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 teaspoon mint extract
2 1/2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
½ cup mini chocolate chips
½ cup sugar for rolling the dough
Instructions:
Beat butter and sugars together until mixed
Add eggs, and extracts
Mix until fluffy
Add flour, cocoa and baking soda
Stir to combine
Let dough chill in fridge for a minimum of 30 minutes
Roll balls of dough and coat in sugar
Cook at Fahrenheit 350° for 11 minutes
Transfer to a wire rack or paper towel to cool

DOUBLE CHOCOLATE CHIP COOKIES | Brown butter double chocolate chip cookies

These are rich, fudgy, gooey double chocolate chip cookies. Simple ingredients, one bowl recipe, no machine needed and no chilling required.
INGREDIENTS:
3/4 cup all purpose flour
1/4 cup cocoa powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 cup butter
1/2 cup brown sugar
1/4 cup white sugar
1 egg
1 tsp. vanilla extract
3/4 cup semisweet chocolate chips
Yield: 6-7 (4 oz. cookies)
TIP:
• Do not overmix the cookie dough.
• Always preheat your oven.
• Do not overbake your cookies.

Homemade Chocolate Sandwich Cookie Recipe
These cookies have almost a brownie like consistency and are filled with a delicious vanilla buttercream.
1 3/4 cup all-purpose flour
3/4 cup unsweetened cocoa
2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1/4 cup milk, or buttermilk
1 stick butter, room temperature
4 - 4 1/2 cups powdered sugar
1/4 cup milk
For the cookies, preheat the oven to 350° and line two cookie sheets with parchment paper. In a medium bowl, whisk together flour, cocoa, baking soda, baking powder, and salt. In a large mixing bowl, beat together sugar, oil, eggs, and milk. Gradually add dry ingredients and beat after each addition until well combined.
Scoop the dough with a 2-tablespoon cookie scoop and place them on the prepared baking sheets.
Bake for 8-12 minutes. Allow them to cool completely before filling.
To make the buttercream cream butter until smooth and creamy, 2 to 3 minutes. With mixer on low speed, add 2 cups powdered sugar and mix. Once combined add in half of the milk and mix. Repeat with the rest of the powdered sugar and then the milk again. If necessary, gradually add remaining 1/2 cup sugar to reach desired consistency.
