Often, however, regular chili with ground beef gets to be boring. In light of this, white chile chicken can add just the variation to add new zeal to our chili repertoire. The ingredients are simple, the outcome is out of this world, and the process is easy.

White Chicken Chili Recipe
Chili in May? When snow is in the air, that is what we have. My kids are in the outdoor sports of Track and Baseball so they need to be warmed up when they all get home. This meal is just the thing to do that. You have the ability to adjust the spiciness to whatever works best for your family in this recipe. So cook it up, to warm up after a long cold day.
White Chicken Chili
-4 cups of cooked shredded chicken (either roast a chicken or buy the store cooked ones)
-2 TBSP olive oil
-1 medium diced yellow onion
-1 jalapeño finely diced (remove ribs and seeds to make it less spicy)
-2 garlic cloves minced
-1 can of diced green chilis 4oz
-Dash of red pepper flakes (add more or less to your liking)
-1 tsp cumin
-1 tsp oregano
-1/4 tsp chili powder
-fresh cracked black pepper
-1- 32 ounce container of vegetable or chicken stock
- 1 cup of water (can sub for more vegetable or chicken stock)
-zest of 1 lime
-juice of 1 lime
- 1 can of 15 1/2 ounces of great Northern beans, drained, and rinsed
-2 cups of frozen corn
-1 to 1 1/2 cups of frozen chopped spinach
-1/4 to 1/2 tsp of salt if needed
Optional toppings include shredded cheese, sour cream, green onions, crushed tortilla chips, and so on.
First cook or buy your roasted chicken. In a large pot over low to medium heat, put in your olive oil, diced onion, diced jalapeño, minced garlic, diced green chilies, and stir. Next Eden, your cumin, oregano, red pepper flakes, chili powder, fresh pepper, and stir again. Add in your stock and water at this point. Next zest your lime, put that in along with the juice in a lime. Now add in your beans, frozen corn, cooked chicken, and spinach. Bring to a boil, then reduce down to a simmer for 10 to 15 minutes until vegetables are cooked. Taste and add your salt if needed. Put into bowls then add whatever toppings you like such as shredded cheese, sour cream, sliced green onions, crushed tortilla chips, and so on. Enjoy this cold evening meal!
