1/2 lb : Russet Potatoes, Peeled
2 md : Onions, Peeled and Thinly
3 : Eggs, Lightly Beaten
1 tb : Fine Dry Bread Crumbs
2 1/2 ts : Salt
Black Pepper; Freshly Ground
5 c : Water
1 tb : Tomato Paste
1/2 c : Grated Parmesan; Fresh
9 tb : Olive Oil
4 : Garlic Cloves, Peeled
2 c : Dried Navy Beans
1/4 ts : Red Pepper Flakes
1 tb : Parsley; Minced
How to Make a Sweet Potato Pie | Sweet Potato Pie | Thanksgiving Recipe

2 cups sweet potatoes (mashed)
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/4 tsp + pinch salt (I used table salt)
1.5 Tbsp lemon juice (start small and add to taste)
1.5 tsp pure vanilla extract
1/3 cup half n half (room temp)
2 eggs (room temp)
1 Tbsp flour
4 Tbsp unsalted butter, melted
1 Deep dish pie shell (I used Mrs. Smith 9 deep dish flaky pie crust)
This recipe will only make 1 pie. You'll need 2-3 medium sized sweet potatoes (roughly 2.5 lbs). Bake potatoes at 425°f for 1 hour or until tender. Let cool completely then smash with a masher or fork. Measure out 2 cups of sweet potatoes in a glass measuring cup. Blend on medium speed for 4-5 minutes to get smooth creamy texture. Remove any potato strings from blender, then add other ingredients. Mix well to combine. Don't overmix after adding the flour. Bake on 350°f for 40 - 50 minutes. Pie will be slightly jiggly in the center. Let set for a couple of hours. To blind bake pie shell set oven to 375 and bake until crust reaches desired doneness. All ingredients should be at room temperature. Taste it as you make it. Enjoy!
All sweet potatoes are not the same, don't use bad potatoes ones.

If you're looking for a simple and yet delicious one pot kinda meal, then this potato, cheese and vegetable pie is for just you. It is all in one: Comforting, warming, easy to make and versatile, since you can substitute the vegetables for the ones you like the most!
SUPER EASY COMFORT FOOD: MY POTATO, CHEESE, AND VEGETABLE PIE!
INGREDIENTS:
4 large potatoes, cooked
2 tablespoons of flaxseed in 6 tablespoons of water
1/4 (could be more) of all-purpose flour or rice flour
vegan cheese
Black pepper
salt
1 1/2 teaspoon of baking powder
--------------------------------------
1 finely chopped carrot
1 clove of garlic, minced
1/2 onion, finely chopped
1 cup finely chopped green beans
1/2 cup red, yellow or green pepper
1/3 cup of corn
pepper to taste
salt to taste
fresh parsley
METHOD:
Stir fry the onions for 5 minutes, add the garlic, stir fry for 1 minute, add the remainder of the vegetables, stir fry for 3 minutes more, turn off the heat and set it aside.
In a bowl, mash the potatoes, add the flour, salt, and pepper, the flax egg, the baking powder, and the water, mix to combine, add the cooked vegetables, mix to incorporate, add the vegan cheese, put it to a baking dish, put it in the oven at 185C (350F) for 45 to 50 minutes, remove from the oven, sprinkle some fresh parsley on top and serve it!

Easy Bean & Potato Pie
This is my recipe for easy and hearty bean and potato pie. Perfect for weekday meal.
Summary of recipe :)
Ingredients:
5 medium size potatoes
1 can of mixed beans in sauce (I used mild chili sauce)
1 carrot
1/4 of onion
1 clove of garlic
100 ml (1/2 cup) of chopped tomatoes
1 tblsp of oil
Milk and butter for mash (I used dairy free option)
Salt and pepper
Method:
Peel, cut and boil potatoes until soft for mash
Dice onion , carrot and cook in pan for few minutes minutes with little bit of oil. Add diced garlic.
Mix in beans and chopped tomatoes. Cook in pan for another couple of minutes. Check seasoning.
Make mash.
Pour bean mix in 2 pie dishes and top up with mash
Cook in 160C over for 20-30 minutes.
