น้ำตาล 1 ช้อนโต๊ะ
น้ำมันเมล็ดดอกทานตะวัน หรือ น้ำมันพืชก็ได้ค่ะ 1 ช้อนโต๊ะ
แป้งขนมปัง 1 ถ้วย
แป้งสาลีอเนกประสงค์ 1 ถ้วย
แป้งโฮลวีท 1 ถ้วย
เกลือ 1/2 ช้อนชา
งาดำ 1 ช้อนโต๊ะ
งาขาว 1 ช้อนโต๊ะ
เมล็ดเจีย 1 ช้อนชา
*แป้งบางยี่ห้อ หรือ คุณภาพของแป้งที่ใช้อาจไม่เหมือนกัน ถ้าแป้งแห้งเติมน้ำได้ ถ้าแป้งแฉะเต็มแป้งได้นะค่ะ ปรับจากสูตรได้เล็กน้อย

Ingredients
280 ml warm water
1 tablespoon yeast
1 tablespoon sugar
1 tablespoon sunflower oil
1 cup bread flour
1 cup all purpose flour
1 cup whole wheat flour
1/2 teaspoon salt
1 tablespoon black sesame seed
1 tablespoon white sesame seed
1/2 teaspoon chia seed
*every flour may behave differently when absorbing liquid so if your dough mixture turned out too wet & seems impossible to work with just add up flour
❤️Preheated oven at 390F/200C Bake for 20 minutes

Beginner Bread Machine Recipe~Soft Sesame Seeds Wholewheat Loaf ~初学者面包机芝麻全麦土司~简单柔软面包
This is a 750g Bread Machine/ Maker Bread Recipe. This step-by-step tutorial is easy to follow for beginners. Just follow the steps and you will definitely make a Nice yummy Loaf of Bread. Sequent for adding ingredients, please follow the Manual of your Bread Machine as it may be slightly different. Different brands of flour, absorption of water is different as well. Just make sure the dough doesn't stick to the paddle when the dough is formed. As long as you are in Malaysia or a place with similar climate conditions, this recipe will be just right. I use “Basic” mode for this Sesame Seeds Wholewheat Loaf (about 25% Wholewheat flour used). This Sesame Seeds Wholewheat Loaf is soft and nutritious as I use Molasses Sugar and Himalaya Salt. Sesame seeds are a good source of healthy fats, protein, B vitamins, minerals, fiber and antioxidants.

Sesame flour is a grain free flour that is a good alternative for people who are sensitive to nuts or coconuts. They have a good source of healthy fats, fiber, protein, antioxidants, B vitamins, minerals and other beneficial plant compound. They also have anti-inflammatory properties. Black sesame seeds have a slightly nuttier flavor than the white counterpart but both types have the same benefits.
It may be more costly to buy the pre-grounded ones and they are not so easily available too. At my home country, I can only find black sesame flour which cost the same as almond flour. But the seeds only cost a fraction of the sesame flour so its much cheaper to grind them ourselves. I used a multi grinder so it's super easy but you can also use a coffee bean or spice grinder. As grinding the seeds can easily turn it into seed butter, you need to pulse a few times as shown in the video. Grinding the seeds ourselves may not be as fine as the commercial ones but there is no difference in the baking result. However, I found that the pre grounded sesame flour needs more water than the self grounded ones. I believe the latter is more absorbent hence, there is a difference in the absorption rate.
Now the seeds are black as their hulls (shells) are in tact, whereas white seeds have their hulls removed. Black sesame seeds are more flavorful and have a stronger aroma with a hint of bitterness but it's something that is lovely and mellow, rather than sharp. Sometimes, the subtle bitterness is not even apparent especially when the bread is topped with flavorful spreads or ingredients. However, the white sesame bread is milder in taste so if you do not like the taste of the black sesame bread, you can try the white version.

INGREDIENTS
DRY INGREDIENTS
Black or white sesame meal or flour = 360 g / 3 cups
Psyllium husk powder = 26 g / 3 tbsp (Note: The psyllium husks must be ground until half its original volume before using. This is important as it will absorb the water more effectively and this is actually more suitable for baking. However, if you are using pre ground psyllium powder, only 2 to 3 tsp is required. Please see this video about psyllium husk and powder for better understanding and success -
Baking powder = 16 g / 4 tsp
Salt = 4 g / 1 tsp
WET INGREDIENTS
Egg whites = 8 large egg whites (285 g) OR 4 whole eggs
(Note: The protein from egg whites will boost the rise while the fat from egg yolks will hinder the rise. Hence, egg whites are highly recommended)
Apple cider vinegar = 43 g / 3 tbsp
Hot or boiling water = 360 ml / 1 1/2 cup (If using pre grounded sesame flour)
= 240 ml / 1 cup (if using self grounded sesame meal)
For topping = some black or white sesame seeds (optional)
DIRECTIONS
1. Pre-heat the oven at 350F or 180C.
2. In a bowl, mix all the dry ingredients together until well combined.
3. Add all the wet ingredients and mix until it becomes a dough. This is a very soft dough and it cannot be shaped into a loaf. Rest the dough for 5 mins and it will thicken up.
4. Pour the dough into a 8x4 greased pan lined with parchment paper.
5. Spread the dough evenly but try to make the top slightly round so that it will rise nicely at the center.
6. Sprinkle with black or white sesame seeds and press them down lightly to ensure they stick to the dough.
7. Bake at the lowest rack for 1 hour or until cooked. Use a wooden skewer to test for doneness.
8. Cool completely on a wire rack before slicing.
9. This bread can be kept at room temperature for a few days if you have a cool and dry climate. Otherwise, it's better to refrigerate earlier or freeze to maintain freshness.

About 2 months ago, I published a video on Keto Black Sesame Cake ( This version has a mix of coconut flour and ground black sesame seeds. However, some of you have feedback to me that the black sesame seed taste is quite mild hence, I developed a new version using 100% ground sesame seeds. I used an even mix of ground black and white sesame seeds and it turned out so well - soft, moist and delicious with a more intense flavor.
Black and white sesame seeds are another cheap and healthy option for low carb baking. I have used them for making keto bread and buns and they are light, fluffy and crispy when toasted. Check out the videos for Keto Black & White Sesame Bread - and Keto Black & White Sesame Buns -

Ground Black Sesame Seeds = 120 g / 1 cup
Ground White Sesame Seeds = 120 g / 1 cup
Baking Powder = 12 g / 3 tsp
Monk fruit = 60 g / 1/4 cup. (You can also use any other keto friendly sweetener.)
Salt = 1/4 to 1/2 tsp
IMPORTANT NOTES:
1. For both raw black and white sesame seeds, you can easily grind them in a multi grinder, coffee or spice grinder, powerful food processor / blender. Do not overgrind them as they can become a paste or butter. You can watch this video on Keto Black & White Sesame Bread on how to grind the seeds -
2. For black sesame seeds, you can also use roasted and pre-ground ones that comes in a tin which are available in supermarkets. Black sesame seeds tend to be nuttier and smokier. They have their hulls (shells) intact and are more flavorful.
3. White sesame seeds have their hulls removed and they have a slightly sweet and nutty flavor. They also taste a little less intense than the black ones.
4. If you prefer a more intense flavor, you can use all black sesame seeds for the cake. Similarly, if you prefer a milder taste, you can use all white sesame seeds. The ratios are the same.
5. There is a mild hint of bitterness in this cake which mostly comes from the black sesame seeds. Hence, if you use all black sesame seeds, the cake may have a little stronger taste of bitterness and the cake will be a lot darker in color. If these are not an issue to you, feel free to use 100% black sesame seeds.
WET INGREDIENTS
Whipping Cream = 200 ml / 0.8 cup (Note: You can also use coconut cream, yogurt or sour cream.)
Eggs = 3 large whole eggs / 170 g
Coconut oil = 60 ml / 1/4 cup (Note: You can also use melted butter or olive oil)
FOR NON-DAIRY OPTION
1. You can replace the whipping cream with the same amount of coconut cream.
2. You can also replace the whipping cream with 170 ml of Pea or Almond Milk, but the coconut or olive oil needs to be increased from 60 ml to 100 ml.
DIRECTIONS
1. Preheat the oven to 340 F or 170 C.
2. In a bowl, add all the dry ingredients and mix until well combined.
3. Add all the wet ingredients and whisk until well combined. The batter is smooth and moderately thick.
4. Pour the batter into a greased pan lined with parchment paper at the bottom. In the video, I used a 6 inch or 15 cm round pan with a removable bottom. You can also use a springform pan or any suitable pan.
5. Bake at the middle rack for 50 to 55 minutes or until a wooden skewer comes out clean. It takes a little longer to bake this cake as it is thicker than my other 6-inch cakes. Of course, if you use a bigger pan, then the cooking time will be shorter.
6. Cool completely on a wire rack then dust with powdered sweetener (optional).
