10 1/2 oz Pkg more-nu tofu silken; sof 1 c Walnuts; chopped 1/4 c Sunflower seeds 1/4 c Scallions; chopped 2 tb Soy sauce 2 tb Nutritional yeast 1/2 ts Basil 2 c Herb seasoned stuffing; (pep In a food processor or blender, puree tofu then add rest of ingredients except stuffing. Put stuffing into a bowl and pour tofu mixture over it. M well. Form into 8 burger patties and bake on a greased cookie sheet in a 350F ove for 25-30 minutes or until golden brown. (Note: These can be grilled also!) Serve on a burger bun with your favorite condiments. NOTE: These can also be formed into 24 meat balls and served with spaghetti sauce over pasta. I'm also in the process of creating my own simple and easy to follow beginner friendly vegan cookbook. This cookbook will include simple recipes, replicating some of your favorite foods you are used to eating but veganized (yes, I said veganzied lol). Once again I want to thank EVERYONE who has supported me so far!!!!
Ingredients 2 cups of walnuts, soaked 1/2 onion diced 1/2 green bell pepper diced 1/2 red bell pepper diced 1 cup of baby bella mushrooms diced 2 tablespoons grapeseed oil 1 pack of taco seasoning (make sure you read the ingredients!) spring water Food processor
Directions Soak 2 cups of walnuts in boiling hot spring water in a glass container for 20 mins to an hour. Rinse walnuts then place soaked walnuts into food processor, add 1 pack of vegan taco seasoning and pulse to desired consistency.(3 to 4 times max Add grapeseed oil to pan over medium to high heat and sauté peppers and onion for 5 – 10 minutes. Add the walnuts and mushrooms and saute for an additional 5 to 10 minutes or to your liking. Add in 1 – 2 tablespoons of spring water as needed while sautéing to maintain moisture of walnut meat. Serve with tacos, pasta, nachos or any dish that calls for ground meat!
