This vegan bean stew or buranija as we call it is my childhood on a plate! And this is my type of food – light vegetable stew, mild in flavor and something I never can get bored of.
For this dish my grandma used frozen yellow beans. She likes to pre-cook them just to get rid of any impurities. But you can skip this step. Instead, you can just wash the beans under running water, drain and then just add to the rest of the vegetables.
And if you skip the pre-cooking of the beans this becomes an easy vegan stew recipe. Which you can prepare in under 30 minutes. Cooking time depends on how quickly beans and the potatoes cook.
I like to serve this vegan bean stew with Serbian pavlaka. Pavlaka is a daily product, thick and a little sour. Instead you can use sour cream, crème fraiche and even Greek style yogurt. Also, you need a piece of bread to soak up the juices with! In Serbia, I like to use simple and very soft white bread. But any sort of bread will go beautifully.
I prefer this yellow beans vegan recipe just as is, with no meat. If you can not without meat, like my grandma, then you can serve the meat on a side. Roasted, grilled, fried -it doesn’t matter, they all go well with the beans!

Ingredients:
15 leaves of kontomire/taro leaves
2 medium red onions
1 fresno pepper sliced
2 carrots
salt to season
3 table spoons of virgin coconut oil
1 teaspoon ginger
1 clove of garlic
1 cup total of melon seeds (white and green)
4 roma tomatoes
about 2 cups of water
340 oz of tofu (soy bean curd)
2 table spoons of light soy sauce
a pinch of freshly crushed black peper
oil of preference for deep frying tofu (I used canola)

The tastiest Peanut Butter Stew / sauce - Senegalese, Mali, Gambia inspired Mafe’ || Maafe’

INGREDIENTS: • whole duck butchered, seasoned with salt and pepper
• 2-3 tbsp Cooking oil for searing duck
• 2 red onions chopped and cooked in rendered duck fat
• Add 1 heaping tbsp tomato paste to cooked onions and cook for 3-5 mins
• Stew base blend of 4 scallions, 3 garlic cloves, 1 scotch bonnet, 1 tbsp ginger paste, 1 tsp rosemary, handful flat leaf parsley, 1 red bell pepper, 2 Roma tomatoes. Add this blend to onions and tomato paste, and cook on medium heat till oil resurfaces.
• Add 1/2 tbsp curry powder
• 1/2 cup roasted peanut butter, thinned up with 4 tbsp hot water. Add to stew base, stir to evenly combine.
• Add 1 tbsp each shrimp powder, and all purpose seasoning. Substitute all purpose seasoning with 1 chicken bouillon cube
• Add seared duck and all of its juices to stew.
• Season with salt to taste
• Add 500 ml hot water to pot, stir, and cook on low heat, with lid on, for 25 mins.
• Add the following fresh vegetables: 1/2 a small green cabbage cut in to two, 1/2 each green and yellow bell peppers, small sweet potato, and russet potatoes, carrots, onions cut into wedges, and some habaneros. Key is to cut all your veggies into big chunks, in order to keep their shapes, and have the perfect texture for the final show stopping presentation!
