How To make Vegetable Kabobs
1 Small eggplant about 3/4 lb.
- cut into 2" cubes 3 Medium carrots sliced 1/2"
8 Small red potatoes
3 Medium zucchini sliced 1"
1 Large red or green pepper
- seeded and cut into 1" sq. 2 Medium onions cut in wedges
- separate wedges into 2-3 - layers each 16 Whole mushrooms
Herb marinade (see - following recipe) Salt and pepper to taste Cook eggplant in 1" boiling water for 3 minutes and drain. Cook carrots in 1" boiling water until just tender crisp and drain. Cook unpeeled potatoes in 1" boiling water for approximately 15 - 20 minutes. Drain and cut in half. Place eggplant, carrots, potatoes, zucchini, peppers, onions and mushrooms in a large plastic bag. Add marinade, seal bag well. Refrigerate for 2 hours or overnight. Drain vegetables and reserve marinade. Using 8 metal skewers, thread vegetables, alternating varieties. Place on lightly greased grill, over low heat. Cook, turning often, basting with the reserved marinade for 10 - 15 minutes, or until vegetables are tender. Sprinkle lightly with salt before serving. Remaining marinade can be used again. It can be refrigerated for up to 2 weeks. NOTE: if wooden skewers are used, soak them in water for 15 - 20 minutes before using. This prevents the wood from burning.

Veggie Kabobs Recipe
This video is a tutorial on how to prepare and grill vegetable kabobs. You may use different veggies, but our favorites are mini peppers, onions, mushrooms, and tomatoes. It's better to use flat skewers for vegetable kabobs; however, if you are using regular round skewers, you may use two skewers per veggie kabob, so that the vegetables flip easily. These vegetables will have delicious smokey flavor, and they don't require much seasoning. Simply adding salt and olive oil will add extra flavor. Enjoy!

Honey-Garlic Chicken & Veggie Skewers
INGREDIENTS
Marinade
3 tablespoons vegetable oil
⅓ cup honey
⅓ cup soy sauce
3 cloves garlic, minced
1 teaspoon pepper
Skewers
Wooden skewers
3 chicken breasts, cubed
1 red onion
2 red bell peppers
2 orange bell peppers
2 yellow bell peppers
Parsley
PREPARATION
Soak the skewers in water for 5-10 minutes and set aside.
If baking, preheat the oven to 400°F/200°C.
In a bowl with the chicken, add the ingredients for the marinade and mix until coated. Cover with plastic wrap and refrigerate for 30 minutes to 2 hours.
Prepare the vegetables by cutting them into 1-inch squares.
Assemble the skewers starting with the red onion, followed by the bell peppers and chicken.
Repeat three times.
Place the prepared skewers on a baking sheet and brush with remaining marinade.
Bake or grill for 20-30 minutes or until chicken is no longer pink.
Sprinkle with parsley and enjoy!

Healthy Vegan Kabobs with Pineapple Jalapeno Sauce- Oil Free, Refined Sugar Free
RECIPE:
Sauce:
2 cups pineapple
2 jalapenos seeded
4 garlic cloves
4 tbls coconut aminos
Optional but recommended: 1 tsp smoked paprika
Vegetables:
½ red pepper diced
½ yellow pepper diced
½ orange pepper diced
2 zucchinis cut into large chunks
1 pound oyster mushrooms removed from core
1 pint of cherry or grape tomatoes
Smoked Chipotle to taste.
Prepare your sauce by combining all the sauce ingredients in a high speed blender. Blend until smooth.
Arrange an assortment of veggies and mushrooms on your skewers. Place skewers on a parchment lined baking sheet. Brush generously with sauce. Sprinkle with Smoked Chipotle.
Bake @400 for 20 minutes. Add to a bed of prepared quinoa. Top with extra sauce and chipotle seasoning if desired.
