Quick & Tasty Vegetable Biriyani/Pressure Cooker Vegetable Biryani-Easy Veg Biryani-Recipe no 146
Authentic Kerala Dishes with my personal Touch ????
Basmati Rice/Jeeraka sala rice-2cups
Onion-2 small
Onion-2 for frying
Cashewnuts-handful
Raisins-handful
Tomato-one
Ur choice of vegetables -
Ginger-small piece
Garlic-4 cloves
Green chilli-4
Turmeric powder-1/4tsp
Chilli Powder-1/2tsp
Garam masala-1tsp
Coriander leaves-
Mint Leaves-
Curd-1 tbsp
Cardamom-3
Cloves-3
Cinnamon-1 stick
Fennel seeds-few
Bay leaf-1
Salt
Ghee
Lemon Juice -1tbsp
Water-3 3/4 cups
Method
Wash rice thoroughly and soak for 20 minutes ..
Then roast thinly sliced onion(1) till golden colour ..remove and keep aside in a kitchen tissue
Roast cashew nuts and raisins in ghee and keep aside ..
For the masala preparation
Soak soya chunks in hot water for 20 minutes and then squeeze the water out and again wash well for 2-3 times and drain them ..keep aside
Heat ghee or dada in a cooker ..
To that add add whole spices and roast ..
Then
add ginger-garlic-green chilli mix..
Saute for 2 minutes in medium flame ..Stir continuously
Then add finely sliced onion (2) and add some salt and saute until golden colour ..
Then add mint-coriander leaves and saute ..
Then add turmeric powder ,chilli powder and garam masala powder and saute until the raw smell goes ..
Now add finely chopped tomato ..Cook until oil oozes out ..
Now add curd and mix well ..
Then add all vegetables and soya and mix well..
Cook for 2-3 minutes in medium flame ..
Then add water and mix well..
Check the taste .. Add salt and spices if u need
Now allow this to boil well.
Then add drained rice and mix well..
Close the cooker with out the weight and cook in low flame for 7 minutes .
Then off the flame and remove the cooker and allow to sit for 15 minutes ..
After 15 minutes and open the cooker ..
Using a fork puff up the rice ..
Finally sprinkle roasted cashewnuts,raisins ,onions
U can add some more mint and corinander leaves ..
Sprinking some ghee will enhance the taste ..
So the easy cooker biriyani is ready to serve

2 cups Basmati rice
2 tbsp ghee
2 bay leaves
1 inch cinamon stick
4 cloves
4 cardamom
1 large onion(sliced)
3 green chilies
1 tbsp ginger garlic paste
1/2 tsp turmeric powder
1 tsp garam masala powder
2 tsp coriander powder
1 tbsp chili powder
1 tomato
1/2 cup curd
any vegetables of your choice
3 carrots
12 beans
1/4 cauliflower
1 potato
1/4 cup Green peas

Veg Biryani in Pressure Cooker | Veg Biryani Recipe
Pressure Cooker Vegetable Biryani
Ingredients
Basmati Rice - 1 Cup (250 Ml)
Ghee - 3 Tsp
Whole Spices [Cinnamon, Cardamom Pod - 3 Nos, Star Anise - 1 No.
Mace, Clove, Bay Leaf, Stone Flower (Optional)]
Onion - 2 Nos Chopped
Ground Masala Paste
Oil - 2 Tsp
Tomato - 2 Nos Chopped
Turmeric Powder - 1/4 Tsp
Salt
Curd - 1/4 Cup
Potato - 1 No. Large
Carrot - 1 No. Chopped
Beans - 7 Nos
Cauliflower
Green Peas - 1/4 Cup
Few Mint Leaves
Few Coriander Leaves
Water - 2 Cups
For Masala Paste
Kashmiri Red Chili - 3 Nos
Green Chili - 2 Nos
Garlic - 3 Cloves
A Piece of Ginger
Chopped Onion - 2 Tsp
Few Mint Leaves
Few Coriander Leaves
Little Water

Method
1. Wash 1 cup (250 ml) of long grain basmati rice and soak it in water for about 15 min.
2. After 15 min, drain the water and keep it aside.
3. For masala paste - add 3 Kashmiri red chili,2 green chilis, 3 cloves of garlic, a piece of ginger, 2 spoons of chopped onions, a few mint & coriander leaves & finally add some required water and grind it to a fine paste.
4. Heat the pressure cooker, add 3 spoons of ghee, few spices like 1 cinnamon, 3 cardamom pods, 1-star anise, a piece of mace, few cloves, 1 bay leaf, a small piece of stone flower(optional).
5. Now add 2 finely chopped onions, sort the onions till it turns to nice golden colour and add the ground masala paste. Cook until the raw smell vaporizes.
6. Add 2 spoon of oil, only if the gravy is dry.
7. Add 2 numbers of chopped tomatoes and cook until it mashes.
8. Masalas to be added – ¼ tsp of turmeric powder, salt as required and add ¼ cup of thickening curd.
9. Veggies to be chopped and added – 1 large potato, 1 carrot, 7 beans, 1 bowl of cauliflower and ¼ cup fresh peas. Mix & cook the ingredient for about 5 min.
10. For flavor add some mint and coriander leaves.
11. Finally, add the soaked basmati rice and 2 cups of water for it to cook. (add salt as needed)
12. Now pressure cook the biriyani for 2 whistles in medium heat.
13. Turn off the stove and let the pressure cooker for about 15 min.
14. You can now serve the delicious veg biriyani with your choice of raita or onion salad. HAPPY FOODING!!!!
