5 medium size Onion, slice, प्याज
Oil for frying, तेल तलने के लिए

Marination:
2 medium Carrot, chopped, गाजर
10-12 French beans, chopped, बीन्स
1 ½ cups Cauliflower, florets, फूलगोभी
200 gms Paneer, cut into cube, पनीर
⅓ cup Prepared Fried Onion, तला हुआ प्याज
2 tbsp Fried onion oil, तले हुए प्याज का तेल
⅓ cup Curd, beaten, दही
few fresh Mint leaves, पुदीना पत्ता
¼ cup fresh Green peas, हरी मटर
Salt to taste, नमक स्वादानुसार
2 Green chilli, हरी मिर्च
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Coriander powder, धनिया पाउडर
few fresh Coriander sprig, roughly torn, धनिया पत्ता
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
2 tsp Fried onion oil, तले हुए प्याज का तेल

2-3 tbsp Ghee, घी
2 Bay leaf, तेजपत्ता
½ inch Cinnamon stick, दालचीनी
2-3 Cloves, लॉन्ग
2 Green cardamom, हरी इलायची
1 Black cardamom, बड़ी इलायची
Marinated vegetables, मैरिनेटेड सब्ज़ियां
Few Mint leaves, पुदीना पत्ता
3 cups Basmati classic, soaked for 20 minutes, बासमती चावल
4 ½ cups Hot water, गरम पानी
few Fried onions, तला हुआ प्याज
2 Green chilli, into half, हरी मिर्च
A pinch of garam masala, गरम मसाला
Salt to taste, नमक स्वादानुसार
1 tsp Kewra water, केवड़ा
few Saffron strands, केसर
2 tsp Ghee, घी

2 medium size Potato, boiled, small cubed, आलू
1 medium Onion, chopped, प्याज
1 medium Tomato, chopped, टमाटर
2 Green chilli, chopped, हरी मिर्च
1 cup Curd, beaten, दही
1 tbsp Coriander leaves, chopped, धनिया पत्ता
1 tbsp Mint leaves, chopped, पुदीना पत्ता
Salt to taste, नमक स्वादानुसार
¼ tsp Sugar, चीनी
½ tsp roasted Cumin powder, जीरा पाउडर
A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर

Process

Cut onion into thin slices and ensure they are almost of the same thickness.
Heat oil in a kadai, add a few onion slices at one time and deep fry until crisp and golden in color.
Transfer them to an absorbent paper. Cool them completely and store in an airtight container for further use.

In a large bowl, add carrot, french beans, cauliflower, paneer, and fried onion.
Add fried onion oil, curd, fresh mint leaves, fresh green peas, salt to taste.
Add green chilli, degi red chilli powder, turmeric powder, coriander powder, fresh coriander sprig and mix it well.
Add ginger garlic paste, fried onion oil and marinate everything well. Keep aside for further use.

In a large cooker, add ghee once it's hot, add bay leaf, cinnamon stick, cloves, green cardamom, black cardamom let it splutter.
Add marinated vegetables and saute it well.
Cover it with a lid and cook on medium flame for 2-4 minutes.
Add a few mint leaves, soaked basmati rice, hot water, fried onion, and green chilli.
Sprinkle some garam masala, salt to taste, kewra water, few saffron strands, ghee.
Cover it with a lid and cook over medium flame for 1 whistle.
Let it cool at room temperature until pressure inside the cooker goes down naturally.
Open the lid and fluff the rice with a fork. Transfer it to a serving plate or bowl.
Garnish it with coriander sprig and serve hot with raita.

In a bowl, add cubed potatoes, onion, tomato, green chilli, curd and mix it well.
Add coriander leaves, mint leaves, salt to taste, sugar, roasted cumin powder, degi red chilli powder and mix everything well. Keep aside for serving.

Ingredients:
-Cooking oil ½ Cup
-Aloo (Potatoes) peeled & cubes 3 medium
-Phool gobhi (Cauliflower) florets 1 & ½ Cup
-Gajar (Carrots) 1 Cup
-Phaliyan (French beans) 1 Cup
-Shimla mirch (Capsicum) diced 1 Cup
-Mushrooms sliced ½ Cup
-Darchini (Cinnamon stick) 1
-Laung (Cloves) 3-4
-Zeera (Cumin seeds) ½ tsp
-Hari elaichi (Green cardamom) 3-4
-Tez paat (Bay leaves) 2
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Tamatar (Tomatoes) chopped 2 medium
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Chaat masala ½ tsp
-Pyaz (Onion) fried 1 Cup
-Dahi (Yogurt) whisked 1 Cup
-Elaichi powder (Cardamom powder) ½ tsp
-Garam masala powder ½ tsp
-Lemon juice 3 tbs
-Hari mirch (Green chillies) slit 4-5
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Boiling water as required
-Namak (Salt) 1 tbs or to taste
-Darchini (Cinnamon stick) 1
-Hari elaichi (Green cardamom) 3
-Badi elaichi (Black cardamom) 1
-Laung (Cloves) 2-3
-Sabut kali mirch (Black peppercorns) 8-10
-Tez paat (Bay leaf) 1
-Chawal (Rice) sella 500g (soaked for 1 hour)
-Zarda ka rang (Orange food colour) ¼ tsp
-Doodh (Milk) 3-4 tbs
-Elaichi powder (Cardamom powder) ½ tsp
-Garam masala powder ½ tsp
-Pyaz (Onion) fried 3
-Ghee (Clarified butter) 2 tbs
-Har dhania (Fresh coriander) chopped handful
-Podina (Mint leaves) chopped handful
Directions:
-In a wok,add cooking oil,potatoes & fry on medium flame for 2-3 minutes then take out in a bowl & set aside.
-In the same wok,add cauliflower & fry on medium flame for 1-2 minutes,take out in the same bowl & set aside.
-Add carrots,fry on medium flame for 1-2 minutes,take out in the same bowl & set aside.
-Add french beans,fry on medium flame for 1-2 minutes then take out in the same bowl & set aside.
-Add capsicum,mushrooms & fry on medium flame for 1-2 minutes then take out in the same bowl & set aside.
-In a wok,add cinnamon stick,cloves,cumin seeds,green cardamom,bay leaves & mix well.
-Add ginger garlic paste & mix well.
-Add tomatoes,mix well & cook until tomatoes are soft (2-3 minutes).
-Add salt,red chilli powder,turmeric powder,chaat masala,mix well & cook for 1-2 minutes.
-Add fried vegetables & mix well.
-Add fried onion (crush with the help of hand) & mix well.
-Turn off the flame,add yogurt,cardamom powder,garam masala powder,lemon juice & mix well.
-Add green chillies,fresh coriander,mint leaves & mix well.Vegetable korma is ready!
-In boiling water,add salt,cinnamon stick,green cardamom,black cardamom,cloves,black peppercorns,bay leaf & mix well.
-Add soaked rice,mix well & boil until ¾th done & strain.
-In a pot,add boiled rice,vegetable korma & remaining boiled rice.
-In mik,add orange food color & whisk well.
-Now add dissolved food color,garam masala powder,cardamom powder,fried onion,clarified butter,fresh coriander, mint leaves,cover & steam cook on medium flame for 2-3 minutes to build up steam then steam cook on low flame for 10-12 minutes.
-Mix well & serve!
