Vanilla wafers are under-appreciated — not only are they a classic cookie, but the rich, buttery cookie that’s just bursting with yummy vanilla also goes with so many desserts! You can’t have my Creamy Banana Pudding without a crisp nilla wafer, or my 15 Minute Banana Cream Pie (No Bake). And, you can also use nilla wafers in my Homemade Strawberry Shortcake Bars! Honestly, for such a simple cookie, the sky’s the limit, so think out of the box (the prepackaged cookie box, specifically).
Homemade vanilla wafers are super easy to make, and they’re so much more flavorful than the kind you can pick up at the store. This nilla wafer recipe also earns bonus points because the cookies keep really well, so you can make them in advance for any of your nilla needs.

Recipe: Vanilla Wafers
This is a simple, yet delicious recipe and an absolute staple of the kitchen.
Vanilla Wafers:
1/2 cup (125g) butter
2 cups (250g) powdered sugar
3 egg whites + 1 whole egg
1 1/3 cups (170g) flour
2 tsp vanilla extract or 2 tbsp vanilla sugar
pinch of salt
Cream butter and powdered sugar until smooth and fluffy. Beat in eggs one at a time. Briefly combine flour, vanilla and salt. Do not overbeat with the flour. The dough will be quite thin. Place in a piping bag with a round tip or no tip. Pipe small cookies shapes onto a lined baking sheet leaving lots of space between them. Bake at 350°F or 180°C for about 6-8 minutes or until cookies begin to brown.

How to make Nilla Wafers from Scratch - Sweet and Savory Meals
Learn how to make Vanilla Wafers - the homemade version of Nilla Wafers or otherwise called classic vanilla cookies. They are crisp, buttery, and very easy to make, so much better than the store-bought version. Good on their own, or part of other desserts, like trifles or no-bake cakes.

1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon Kosher salt
1/2 cup unsalted butter (room temperature)
1/2 cup powdered sugar
1/3 cup granulated sugar
1 large egg (room temperature)
1 1/2 tablespoon vanilla extract
1 tablespoon whole milk

Nilla Wafers Cake
This is a vintage recipe that I thought I'd share with y'all. It is so easy to make and you are going to love the taste and texture. It is a Nilla Wafer Cake that is made with an entire box of Nilla Wafer cookies. Did your mom or grandma make this? It's one I am sure grandma Jean would have made. So grab you a box of Nilla wafers and lets get to baking. Let me know what you think about this version and y'all enjoy.

Ingredients:
1 entire box Nilla wafers - crushed
1 cup butter at room temperature
2 cups sugar
1 teaspoon vanilla
6 eggs
1/2 cup milk
1 cup crushed pecans
7 ounce bag of coconut
1 pinch of salt
Cream together the butter, vanilla and sugar.
Add eggs one at a time till the yellow disappears.
Alternately add the milk and cookie crumbs. Begin with milk/end with cookie crumbs.
Add in the salt, coconut and pecans and stir to combine.
Pour into a prepared 9x13 baking dish.
Bake in a preheated 300°F oven for 55-60 minutes.
