~ * CHOCOLATE YULE LOG RECIPE * ~
INGREDIENTS
FOR THE CHOCOLATE GANACHE:
- 220g (8 oz) dark or milk chocolate (I used a 64% dark chocolate)
- 250ml (1 cup) double or whipping cream
- 30g (2 tbsp) butter
- Pinch of salt
FOR THE CHOCOLATE CAKE:
- 4 large eggs
- 100g (½ cup) caster sugar
- 75g (⅔ cup) self-raising flour
- 30g (2 tbsp) cocoa powder
- Pinch of salt
FOR THE WHIPPED CREAM:
- 125ml (½ cup) double or whipping cream (you may not need it all for the filling!)
- 1 tbsp icing sugar
- 1 tsp vanilla bean paste or vanilla extract
INSTRUCTIONS
FOR THE CHOCOLATE GANACHE:
1) In a small saucepan, or heatproof bowl in the microwave, heat your cream and butter until it gently steaming and hot to the touch.
2) Remove from the heat and add the chocolate and salt. Allow to stand for 1 minute.
3) Stir your ganache mixture until smooth and thick. Set aside and allow to cool in the fridge or by an open window until thickened into a spreadable frosting consistency.
FOR THE CHOCOLATE CAKE:
1) Preheat your oven to 200°C / 180°C fan / gas mark 5 / 375ºF.
2) Grease and line a Swiss Roll tin (most are of similar size so any should work!) or large roasting tin with greaseproof paper, leaving an overhang at the sides. This will help you lift the cake out once baked.
3) In a large bowl, or freestanding mixer, whisk the eggs and sugar until the mixture is pale and frothy.
4) Gently sift the flour, cocoa powder, and salt into the bowl and carefully fold them in using a spatula or metal spoon. You want a nice smooth and incorporated mixture, but not to knock out too much of the air you just whisked in!
5) Pour the mixture into the lined tin and spread gently and evenly out into the corners.
6) Bake in the middle of the preheated oven for around 10 minutes. When ready, it will feel firm to the touch and a skewer inserted into the centre of the cake will be removed cleanly.
7) Remove the cake from the oven and allow it to cool slightly while you prepare your fillings.
FOR THE WHIPPED CREAM AND ASSEMBLY:
1) To begin assembling the yule log, turn the still-warm cake out onto a large piece of greaseproof paper dusted with a handful of icing sugar. This paper is to help you roll up the cake, and the sugar to prevent it from sticking!
2) Score a fine line around 2cm in along one of the longer edges. Starting with this edge, begin to tightly roll up the sponge with the paper inside and prop it up to allow it to cool completely in this shape.
3) Meanwhile, pour all your whipped cream ingredients into a large bowl and whisk them together vigorously until holding soft peaks. Set aside.
4) Once thickened, whisk the ganache until it is paler and fluffier. This should take no more than 1-2 minutes. Set aside.
5) Unroll the cooled sponge until flat on the paper again.
6) Spread a third of the chocolate ganache all over your cooled sponge.
7) Spread a thin layer of the whipped cream on top. You may not need it all, feel free to save some to serve with the finished cake later if you like!
8) Time to roll the log! Start rolling from the long side furthest away from you, taking care to get a tight roll from the beginning, and roll up to the other long side. Use the paper to help lift and press the cake while you roll (don't worry if there are cracks).
9) Once rolled, gently lift your cake log onto your serving plate.
10) Cut about 3cm off the edges of the log at an angle, and press one or both of them together at one side of the cake to act almost like a broken branch on the log.
11) Evenly spread the yule log with the remaining ganache, covering the ends as well as the branch.
12) Gently draw a fork through the ganache to give it a wooden effect. Draw semi-circles with the fork at the ends of the log and branch.
13) Dust generously with icing sugar, and decorate as you like.
14) Slice up and enjoy!

This chocolate yule log will keep well in the fridge or in an airtight container for up to 3 days, but is best enjoyed fresh!

Ingrédients pour 8 personnes :
Pour la dacquoise aux amandes :
• 75 g de blancs d’œuf (ça fait 2,5 blancs)
• 38 g de sucre en poudre blanc
• 13 g de cassonade
• 63 g de sucre glace
• 63 g de poudre d’amande
• 13 g de fécule de maïs
Pour le croustillant feuillantine :
• 40 g de chocolat au lait
• 50 g de praliné (j'ai utilisé du praliné maison, la vidéo de la recette est ici , sinon vous pouvez en acheter ici : )
• 50 g de crêpes dentelle
Pour la mousse au chocolat :
• 50 g de jaune d'oeuf (ça fait 2 gros jaunes)
• 30 g de sucre en poudre
• 16 cl de lait entier
• 190 g de chocolat noir
• 30 cl de crème liquide entière bien froide
Pour le glaçage miroir :
• 6 feuilles de gélatine (12 g) (on ne peut pas remplacer par de l'agar agar car ça supporte mal le congél)
• 10 cl d'eau
• 170 g de sucre en poudre
• 50 g de cacao en poudre non sucré
• 9 cl de crème liquide entière

What is lava cake made of?
Hot Chocolate transformed into Lava Cakes with melted gooey marshmallow baked into the centre. They are usually prepared with five main ingredients: chocolate, butter, flour, eggs and sugar. FIRST, the chocolate and butter are melted together on the stove before the rest of the ingredients are whisked in.
Domino's introduced its Chocolate Lava Crunch Cakes in 2009, to the delight of dessert fans. Today, it's a menu favorite. Imagine a rich chocolate cake with a slightly crunchy crust and a warm liquid chocolate center that flows out at the nudge of a fork. Now don't imagine it.
Is it safe to eat lava cake? Yes! It may seem concerning to eat a cake that isn't cooked all the way through, but it's not the same as eating raw batter. The temperature while baking cooks the eggs enough to make the molten center perfectly safe to eat.

????????Chocolate Tres leches / milk bath cake????????
This cute little bear cake is adapted from
Tres leches cake
Which literally means, “three milks” and it is an ultra light sponge cake soaked in a sweet milk mixture.
This time I am making my tres leches even more special.
By soaking my sponge cake with mixture of sweet milk, coffee liquor and white rhum
Trust me it taste so good
I like it so much and it is not overly sweet
The hint of coffee in the cake makes it even crowd pleasing desserts
It is very easy to make and perfect to be served after meal or gatherings

Sponge cake:
5 kuning telur
25g gula pasir (2 sdm)
60g minyak sayur (¼ cangkir)
2 sdt bubuk kopi instan
80ml Susu (⅓ cangkir)
90g tepung serbaguna (¾ gelas)
30g coklat bubuk (¼ cangkir)
1 ½ sdt Baking powder
5 Putih telur
65g gula pasir / ⅓ gelas
SUSU RENDAM
120ml Susu kental manis (½ gelas)
120ml Susu evaporasi (½ gelas)
⅛ cup white rhum/bacardi
¼cup coffee liquor /kahlua
Chocolate whipped Cream (Topping) :
375 gr Krim kental
65g gula pasir
4sdm coklat bubuk
100 gr coklat batang ( dilelehkan)
Tambahan
Chocolate powder for dusting
Chocolate for ears , nose and eyes
Chocolate sponge cake :
1. Panaskan oven dengan suhu 160C/320F
2. Lapisi loyang persegi 20 x 20 cm dengan baking paper
3. Campur susu, minyak dan aduk hingga menjadi satu. Tambahkan gula pasir dan aduk hingga gula larut
4. Ayak tepung terigu, baking powder dan coklat bubuk, lalu masukkan 2/3 bagian dalam campuran susu minyak, aduk raga
5. Pisahkan kuning telur dan putih telur lalu masukkan kuning telur secara bertahap ke adonan. Aduk rata. Masukkan sisa tepung, aduk rata
6. Meringue: kocok putih telur hingga berbusa lalu Tambahkan gula sedikit demi sedikit speed rendah hingga medium peak (aku: speed 1 - 3 menit)
7. Ambil ⅓ meringue ke dalam adonan kuning telur dan kocok hingga tercampur rata. Ambil lagi 1/3 bagian dan aduk rata.
8. Pindahkan adonan kuning telur ke sisa meringue dan aduk lipat dengan spatula.
9. Tuang adonan ke dalam loyang dan panggang selama 50-60 menit.
10. Keluarkan dari oven dan biarkan dingin sepenuhnya di rak kawat
12. Kelupas baking paper
13. Lapisi kembali loyang kue dengan kertas roti dan masukkan kembali kue ke dalam loyang
14. Tusuk2 cake dengan garpu
Milk bath:
1. Campur susu evaporasi, susu kental manis, kahlua dan rhum
3. Tuang campuran susu secara perlahan di atas kue, lalu tutup dengan plastik wrap
4. Simpan cake dalam kulkas 1 jam atau semalaman
Topping:
1. Lelehkan coklat
2. Mixer cream, choco powder dan gula hingga soft peak lalu tambahkan melted chocolate, aduk rata
3. Keluarkan kue dari loyang dan frosting dengan chocolate cream, ratakan bagian atas dan sampingnya
4. Trim pinggirannya, potong menjadi 9 bagian, taburi dengan coklat bubuk dan hias
