Smoked Turkey Enchiladas - How To Make Enchiladas
Enchiladas are easy to make and very delicious to eat! These are Smoked Turkey Enchiladas! Tender smoky shredded turkey meat seasoned with Mexican spices and braised in a tomato pepper sauce, then rolled into corn tortillas. Topped with a generous amount of enchilada sauce and shredded cheddar cheese. Then baked to golden brown and bubbly perfection! This recipe can be used with any fresh meat, leftover meat or even a store bought rotisserie chicken for those busy weeknight meals!

Leftover Turkey Enchiladas Recipe
Before the Thanksgiving meal is over, we’re already thinking of the mouthwatering ways we can gobble up the leftovers. And this loaded turkey enchiladas recipe is one of the tastiest of options!
When we say loaded, we mean generously stuffed turkey and cheese enchiladas snuggly arranged in a casserole dish, then lavishly scattered with a scrumptious combination of corn, black beans, and more cheese. When these leftover turkey enchiladas come out of the oven, your family is going to race to the table and fight for the first indulgent bite.

Leftover Thanksgiving Turkey Enchiladas! YUMMMMY!

Today we are making a highly requested dish! Homemade turkey/chicken enchiladas with the special ingredient of homemade red New Mexico enchilada sauce! Ahhhh, so good! This taste brings back my childhood memories! I am making this sauce from scratch so I hope you will give it a try! It’s super easy with lots of flavor. If you are really sensitive to heat maybe use just 1/2 of the Chile powder packet and 3 tbs flour. If you want true authentic sauce you don’t have to add the can of enchilada sauce. It’s actually to cut that flour taste.
Below are the ingredients for each.... Make your grocery lists!
New Mexico Turkey Enchiladas
Enchilada Sauce ( makes approx 6 cups)
1 pkg of mild New Mexico Chile powder (for super mild only use half the packet)
4 tbs Flour
2 c. Canned Enchilada sauce
4 c. Water
1/4 c cooking oil
1 tsp Chicken bullion
1/2 tsp Oregano
1 tsp Cumin
Garlic salt
1 tsp Onion powder
1 tbs Garlic Powder
1 tsp Garlic salt
Salt + Pepper
(Freeze leftover sauce for wet burritos!)
Prepare Meat filling-
3 tbs.oil
1 c. Water
1/2 diced onion
1 fresh jalapeño diced (optional)
1 tbs minced garlic or 2-3 chopped garlic cloves
4 c. Shredded Chicken or Turkey
1 can of diced mild green Chile or jalapeños (optional)
1c. Enchilada sauce (la Victoria can)
1 tbs ground cumin
2 tbs Chile powder
2 tsp chx bullion
1 lemon - juice squeezed
Salt + Pepper
Enchiladas-
12 corn tortillas steamed (wrap in 2 damp towels cover completely and microwave 1 min)
6 c. Enchilada sauce (homemade)
4 c. Cheese (block cheese marbles)
4 c. Chicken or Turkey meat —-(Vegan/Vegetarian-use Jack fruit washed and shredded with soy cheese)
Topping ideas— olives, onions, jalapeños, tomatoes, cilantro, sour cream, etc.... you can add what ever you want!

Healthy Turkey Enchiladas, Easy Weeknight Dinner
These are the best ground turkey enchiladas filled with black beans, red enchilada sauce and southwest spices. ????????CLICK FOR THE RECIPE????????

INGREDIENTS
2 tablespoons avocado oil or olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon kosher salt
1/4 teaspoon pepper
1 (15 ounce) can black beans, drained and rinsed
1 (14.5 ounce) can fire roasted tomatoes
1 1/2 cups can red enchilada sauce (we like Siete) or you can make your own
8-10 corn, grain free or flour tortillas
2 cups shredded Mexican cheese, or try my vegan cashew queso
INSTRUCTIONS
1️⃣ Preheat the oven to 350°F and spray a 9x13 inch casserole dish with cooking spray and set aside.
2️⃣ Heat the oil in a deep saute pan over medium heat. Once it’s hot add the onion and cook, stirring frequently, until softened. Add the garlic and cook for another minute, until fragrant.
3️⃣ Add the ground turkey, chili powder, cumin, paprika, oregano, salt and pepper and cook to break up the turkey until no pink remains, about 5 minutes. Add the fire roasted tomatoes and black beans and stir to combine then remove the mixture from the heat.
4️⃣ Place the tortillas on a microwave safe plate and cover them with a damp paper towel. Microwave them on high for 30 minutes then flip the stack over and microwave for another 30 seconds to make them softer and more pliable to work with.
5️⃣ Spread 1/4 cup of the enchilada sauce in the bottom of the prepared baking dish. Fill each tortilla evenly with the ground turkey mixture and 1 cup of the shredded cheese then roll them up tightly and arrange them in a line on top of the enchilada sauce in the baking dish.
6️⃣ Pour the remaining 1 1/4 cups of enchilada sauce evenly over the enchiladas and top with the remaining cup of shredded cheese. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly. If you're using vegan queso. Omit it before baking and pour it over enchiladas before serving.
