Makes 9 medium patties
Ingredients:
2 cans (280g) tuna
1 cup (90) rolled oats
2 eggs
1/2 large onion
2 garlic cloves
1/4 bunch chives
1/4 bunch parsley
1/2 tsp salt
1/4 tsp chili flakes or black pepper
2-3 tablespoons olive oil
Directions:
1. Drain the oil (or water) from tuna cans. place in a large bowl.
2. Finely chop onion, chive and parsley. Crush garlic. Add to the bowl.
3. Place the oats into a food processor and process for 2 minutes. Add the oat flour to the bowl.
4. Add salt and chili flakes or black pepper. mix well.
5. In a small bowl beat eggs and add to the tuna mixture. Stir until well combined. Shape into patties.
6. Heat olive oil over medium-high heat. Cook the patties for about 3-4 minutes from each side. Or until golden brown. Transfer to a plate lined with paper towel to drain.

Serves 4
Ingredients:
15 oz of tuna (I'm using 3 cans of tuna in water, drain them and place them in a bowl)
3 tablespoons of chopped green onions
¼ cup chopped bell peppers (I used red and Green bell peppers)
3/4 cups of Panko breadcrumbs (or any other dry Breadcrumbs
1 tablespoons of Dijon mustard
3 tablespoons of mayonnaise
a dash of Tabasco
salt and black pepper to taste

These are my Tuna burgers from canned tuna. I am a big fan of tuna burgers from canned tuna. I've played around with this recipe quite a lot in order to find the perfect balance. I find my tuna burgers from canned tuna are enhanced when i add the pesto. I find pesto is a nice kitchen cheat and adds a hit of intense flavour to many dishes. This recipe really is a tasty 15 minute dinner.
Tuna burgers from canned tuna are thrifty and a little goes a long way. I like to pair my tuna burgers from canned tuna up with chopped kale. The kale provides the perfect balance between freshness and texture, this combines well with out Pesto. Large hand full of Kale (finely chopped)
1 cup of breadcrumbs (or crushed crackers)
1 tbsp of Pesto

Brioche bun (toasted)

Drizzle of Olive oil

Healthy Tuna Sandwich:
Lentil Patties:
Ingredients:
2 cans Tuna, drained
1 Onion, chopped
2 Garlic cloves, minced (optional)
2 tablespoons Parsley, chopped
Lemon zest
Salt to taste
Pepper to taste
1/2 teaspoon Cumin
1/2 teaspoon Paprika
2 Eggs, beaten
4-6 tablespoons (g) Almond flour/low carb flour
2-3 tablespoons Olive oil
Dipping sauce:
150g Yogurt
1 tablespoon Dill, chopped
1-2 tablespoons Pickles, Chopped
Directions:
1. Open two cans of tuna and drain the oil/water.
2. Transfer drained tuna onto a mixing bowl. Add chopped onion, minced garlic, chopped parsley, lemon zest, salt, pepper, cumin, paprika, eggs and mix until combined.
3. Add almond flour and mix until combined. Form into patties.
4. Heat olive oil over medium-high heat. add the patties into the pan and fry until golden, about 3-4 minutes, flip and fry until golden.
5. Make the dipping sauce: in a small bowl, mix yogurt, chopped dill and chopped pickles.
6. Serve and enjoy.
Notes:
• No make the patties healthier you can bake the patties in preheated 180C (350F) oven for 15-20 minutes.
• You can serve the patties with any dipping sauce that you like.
