How To make Trout Almondine
1/3 c Butter or margarine
1/2 c Slivered blanched almonds
4 (8 oz) trout
4 T Butter or margarine
1 1/2 t Lemon juice
Salt and pepper 1. In a small, heat-resistant, non-metallic bowl, melt the 1/3 cup butter
in Microwave Oven 30 seconds. 2. Add almonds and heat, uncovered, in Microwave Oven 3 minutes or until
lightly browned; stir occasionally. Set almonds aside. 3. Arrange fish in a shallow, 10-inch, heat-resistant, non- metallic baking
dish. 4. Place 1 tablespoon of butter on each fish and sprinkle with lemon juice
and salt and pepper, to taste. 5. Heat, covered with wax paper, 7 minutes or until fish flakes easily
with a fork. 6. Spoon browned almonds over fish and heat, uncovered, in Microwave Oven 2
minutes or until heated through.

Crispy skin fish in a creamy sauce with chives and almonds. This recipe works almost with any fish, choose a chunky white fillet piece for best results. Almondine a culinary term referring to almonds, the almonds give you the added crunch and toasty nutty flavour. The fish is cooked first skin side down until crispy, once flipped it's finished by poaching in it's own sauce making it juicy. The sauce is poured on the side to keep the skin crispy and garnished with toasted flaked almonds. A fairly simple recipe that rivals fine dining restaurants, now you can do it at home. Always be cautious when flambe-ing the sherry, but if you can do it, burning off the alcohol with remove bitterness and enhance the sherry flavour. Plus it looks cool!

I live near one of the most sought after fly fishing rivers in the U.S. and it's filled with Brown and Rainbow Trout! This recipe is cooked on the grill but it can easily be pan fried or baked in the oven, instead. My Amandine sauce may be a little more unique compared to what you might be used to. Of course this is an Almond based sauce but I've got a few tricks up my sleeve that I think you're going to enjoy. This sauce goes great with Salmon as well but be sure to check out my other fish recipes listed down below.
