milk chocolate, chopped
1/2
cup
milk
3/4
cup
marshmallow creme
2 1/2
cup
almonds, toasted, chopped, divided
Directions:
Melt milk chocolate to 110 degrees F. Scald milk. Add hot milk and marshmallow to melted chocolate, beating until smooth. Stir in 1 1/2 cups almonds. Spread in a buttered 8-inch square pan. Sprinkle remaining almonds over top and press in. When set, cut into squares.
Makes about 49 pieces.

Almond Cream is a basic component in so many tarts. I know it’s more like a batter rather than a cream as it’s something that you need to bake. I’ve seen many people getting it wrong!
Here are some examples of tarts that used almond cream.
Blueberry Tart
Raspberry Tart
▶Almond Cream◀
*All the ingredients need to be at room temp (20℃)
Butter (room temp) 100g
Powdered Sugar 100g
Almond Powder 100g
Eggs (room temp) 95g
Rum 5ml
① Lightly beat the butter.
② Sift in the powdered sugar & almond powder. (In the video the caption says almond powder, but I sifted in both powdered sugar & almond powder together!) Mix well but don’t beat it vigorously.
③ Gradually add the eggs (Do not add all the eggs at once. Split it over 5~6 steps) while beating it.
④ Finally add in the rum and mix.
⑤ Leave it to rest in the fridge. Always use the almond cream the day after you make it.
How to store: In the batter state (before baking) you can store in fridge up to a week. Obviously, after baking it you need to assemble the tart!

You must have tried Almond Croissants from a French Bakery! But have you wondered how to make them at home? Buy your favorite croissants and fill them with delicious almond cream and now you got Homemade Almond Croissants! Very simple to make and very delicious! ✅Ingredients
6 x Croissants
Syrup
• 500ml water
• 250g Sugar
Almond Cream
• 160g Butter
• 160g Sugar
• 2 egg
• 160g Almond Flour
• 20g Flour
• 5 ml Vanilla or almond extract ( optional )
Assembly
• 8-10 of your favorite Croissants
• 50g almond slices
????Instructions
1️⃣Step 1 - Making The Syrup For The Croissants
1. In a saucepan, bring water and sugar to a boil
2. Let it cool down a little bit
2️⃣Step 2 - Soaking The Croissants
1. Cut the croissants open
2. When the syrup is hot but not burning hot it is ready to use
3. Take a croissant, open it and dip it in the hot syrup so it soaks it all up
4. Put the soaked croissants on a baking sheet
3️⃣Step 3 - Making The Almond Cream
1. Cream the room temperature butter, sugar, almond flour and the flour until smooth
2. Add the room temperature egg and mix
3. When the almond cream is light, it is ready
4️⃣Step 4 - Making The Almond Croissants
1. Open all the croissants
2. Fit a flat piping tip or a regular one to a piping bag
3. Fill the croissants with the cream
4. Close all the croissants and add almond cream on top
5. Sprinkle with almond slices
6. In a 350°F oven, bake the croissants for 30-35mintutes until the cream is cooked
7. Let them cool down
8. Enjoy!!!
