Lamb Wrap with Almond Basmati Rice

This lamb wrap is inspired from the Arabic cuisine, but it has clear references to the Greek and Mexican ones. You need to flavor the lamb cooking it with coriander, ginger, and onion. Then quickly make a no-brainer refreshing yogurt sauce. Use these to top and season the basmati rice mixed with fried almonds and pine nuts and served on tortilla wraps.

Liesl Maggiore: I am a huge fan of adding seasonal ingredients to spice up otherwise kind bland foods like rice, couscous, or quinoa. Right now blood oranges are just amazing, and I love to use them when they are in season -- they are so tasty and beautiful! In this recipe, I added them to a basic rice pilaf with some crunchy toasted almonds for texture ... you can serve this as a side dish with just about anything!

Blood Orange Almond Rice Pilaf
Serves 4
2 T. (30 g) butter
2 T. (30 mL) olive oil
1 onion -- chopped
1 c. (185 g) long grain rice
2 c. (475 mL) chicken broth
½ c. (45 g) toasted sliced almonds
2 blood orange -- segmented and roughly chopped.
Heat butter and oil in medium saucepan. Add onion and rice and sauté, stirring often, until rice and onion is translucent and rice is toasted golden brown.
Add chicken broth and bring to boil. Cover, turn heat to low and simmer 15 minutes. Turn off heat and let sit covered for 5 more minutes.
Fluff rice pilaf with fork and stir in toasted almonds and blood oranges. Season with kosher salt, if desired.

This apricot & almond pulao is made using basmati rice, and is so fragrant and fruity! It's perfect for the next time you feel like having rice, but not a typical pulao. The apricots lend a sweet and punchy bite to this fluffy and light version of pulao that also happens to be vegan! Hope you enjoy this apricot & almond rice, and do give it a try the next time you want to change things up! This recipe serves 4-6 people.
INGREDIENTS:
1.5 cups of basmati rice - thoroughly rinsed
1 cup of low sodium vegetable broth
1.25 cups of water
1 medium onion finely diced
2 cloves of garlic finely minced
1 handful of apricots (6-8) chopped into small pieces
handful of almonds (soaked for about 5 minutes and roughly chopped)
3 cloves
3 cardamom pods
2-3 small sticks of cinnamon
1/2 tsp black pepper
1 tsp cumin powder
1 tsp coriander powder
2 tbsp vegetable oil
a bit of salt here and there (keeping in mind the salt in the vegetable broth)
