How To make Tofu Fajitas
Ingredients

tofu, firm, cut into matchstick sized pieces

onion, thinly sliced
1 1/2

bell pepper, green, thinly sliced

chilies, green, can, chopped, undrained

orange juice

oil, olive

tablespoon
vinegar

garlic, cloves, finely chopped

teaspoon
cumin, ground

teaspoon
coriander, ground

teaspoon
oregano, dried

flour tortillas
Directions:
Place tofu, onions, and green pepper in a 9x13 inch baking pan. In a small bowl, combine remaining ingredients, except tortillas, mixing well. Pour over tofu mixture. Cover pan, and refrigerate 4-5 hours, gently stirring tofu mixture occasionally.
Wrap tortillas tightly in aluminum foil and heat in a 350 degree oven for 10 minutes. Heat a large nonstick skillet over medium high heat. Drain tofu mixture (reserving marinade) and place in skillet. Cook, stirring gently, until vegetables are slightly tender. Add marinade, a little at a time, to keep mixture from sticking. If you prefer a juicy fajita filling, add all of the marinade.
To serve, spoon tofu filling into the center of heated tortillas, roll, and enjoy.

Materials
Tofu Fajitas
1 block extra-firm tofu thinly sliced (14 ounces)
1 medium red onion thinly sliced lengthwise
1 half red bell pepper sliced lengthwise
1 half yellow bell pepper sliced lengthwise
1 half green bell pepper sliced lengthwise
2 tablespoons olive oil divided
Homemade Fajita Seasoning
½ teaspoon Salt
¼ teaspoon pepper
1 teaspoon garlic powder
½ teaspoon oregano
½ teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon ground cumin
Garnish (OPTIONAL)
Chopped Jalapenõs, Guacamole, chopped Cilantro OPTIONAL (for garnish)
Instructions
Wrap tofu with a paper towel or a muslin cloth. Place it on a plate. Press it down with a cast-iron skillet or anything heavy. Allow it to release its moisture for about 30-minutes. Then discard the water and pat the tofu dry.
Slice tofu into strips. Chop onions and bell pepper into strips.
Combine Homemade Fajita Seasoning with olive oil. Coat Veggies and Tofu with the seasoning mix.
Heat olive oil in a grill pan or cast-iron skillet. Add tofu and grill until it forms a crispy golden-brown crust on the outside. Set aside.
Repeat the same with onions and chopped bell peppers. Set aside.
Serve them in warm tortillas, topped with chopped Jalapenõs, guacamole, and chopped cilantro

Tofu Fajita
Preparation Time: 5 mins.
Cooking Time: 15 mins.
Ingredients:
Tofu (Cut in square thick cubes): 400 gm.
Salt: To Taste
Onion (Sliced): 1 large/1+1/2 cups
Bell Pepper (assorted): 2 cups
Olive Oil: 2 tbsp.
Garlic (Minced): 1 tbsp.
Black Pepper Powder: 1 tsp.
Paprika: 1/4 tsp.
All Spice: 1/2 tsp.
Roasted Cumin Seeds Powder: 3/4 tsp.
Lemon Juice: 1 tbsp./Juice of 1/2 lemon
Fresh Green Coriander (Chopped): 2 tbsp.
Fresh Basil Leaves: 2 tbsp.
Method:
Sieve tofu to extract all water out, then grill it on a griller/sandwich maker/pan/panini maker/non-stick pan/iron skillet till they get cooked from all sides. In a pan on medium flame, add oil and garlic and cook for 1-1+1/2 mins., then add onions and cook for a minute more and then add bell pepper and salt to cook for 2-3 mins. Then mix the prepared tofu with vegetables. Close the stove and all black pepper powder, paprika, roasted cumin seeds powder, all spice, lemon juice, basil and fresh coriander leaves and mix well before serving in burrito, taco, rice, rolls or with nacho chips.

Ingredients
Fajita Vegetables
· ½ tbsp extra virgin olive oil
· 3-4 garlic cloves, chopped
· 1 medium green bell pepper, julienned
· 1 medium red bell pepper, julienned
· 1 yellow onion, sliced
· ½ tsp smoked paprika
· ¼ tsp Italian seasoning
· ¼ tsp ground black pepper
· ¼ tsp cumin
· ¼ tsp coriander
· 1 tsp salt (adjust to taste)
· ½ lime, juiced
Tofu
· ½ tbsp extra virgin olive oil
· 12.3 oz extra firm tofu
(press and remove moisture, then dice)
· ¼ tsp sweet paprika
· 1 pinch of salt (adjust to taste)
· Black pepper (adjust to taste)
Wraps
· 6-8 corn fajita wraps
Method
Step 1: Begin by draining the liquid and pressing the tofu to remove the moisture. To do so, place the tofu block in between a layer of paper towels followed by a weight such as a bowl or board on top. Allow the tofu to sit for at least 30 minutes so that the moisture is absorbed by the paper towels. Repeat this step if necessary.
Step 2: Once the moisture has been removed, dice the tofu into ½” cubes and set aside.
Step 3: Heat a skillet on medium high heat and add ½
tablespoon of olive oil. Add the garlic cloves and cook for 1 minute (do not brown). Add the bell peppers, onion, paprika, Italian seasoning, black pepper, cumin, coriander, and salt; cook for 3-4 minutes (veggies should still be crisp). Add the lime juice and stir until combined; set the fajita vegetables aside.
Step 4: Heat the SAME skillet with ½ tablespoon of olive oil on medium high heat and add the tofu. Season with paprika, salt and black pepper; cook until golden brown, stirring occasionally.
Step 5: Heat a corn fajita on low heat on a grill pan and toast for 1 minute on each side. If using your gas stove top, toast the corn fajita for a few seconds on each side.
Step 6: Assemble the taco by adding the cooked fajita vegetables, shredded lettuce, black beans, fresh tomato salsa, cooked tofu, kalamata olives, freshly sliced avocado, vegan cheddar cheese, vegan sour cream and fresh parsley.
Serve warm and enjoy!
