How To make Toffee Almond Treats
CRUST:
1 c All-Purpose Flour
1 c Oats
1 c Brown Sugar, packed
1 ts Baking Soda
1/2 c Butter
TOPPING:
1/2 c Corn Syrup
1/3 c Brown Sugar, packed
1/4 c Butter
1/4 c Whipping Cream -OR-
1/4 c Evaporated Milk
1 1/2 c Almonds, sliced
1 1/2 ts Vanilla
CRUST: Combine all ingredients , mixing until crumbly. Press firmly into 13x9x2-inch (3.5L) baking pan. Bake in 350F(180C) oven for 10 minutes.
FILLING: Combine corn syrup, brown sugar, butter, and cream in a medium saucepan. Cook and stir over medium heat until mixture boils. Remove from heat. Stir in almonds and vanilla. Pour over crust, spreading evenly. Bake in 350F(180C) oven 15 to 20 minutes or until golden. Cool on wire rack. Cut into traingles, bars or squares. Store in refrigerator. Makes 48. NOTE: You may substitute All-Purpose Wheat & Oat flour for All-Purpose Flour.

For today’s easy cookie recipe I will be showing you how to make my favourite sweet & salty toffee almond chocolate chunk cookie recipe. Follow along with a step-by-step almond toffee cookie recipe and make these delicious soft chewy cookies in less than 30 minutes. These delicious sweet and salty cookies are perfect for picnics and potlucks. They are loaded with toffee bits, chocolate chunks, and salted almond pieces. These easy cookies are the perfect combination of sweet and salty goodness! These truly are the best cookies ever.
Sweet and salty cookie recipe:
Ingredients:
1 1/4 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/2 cup butter (softened)
1/3 cup white sugar
1/3 cup packed brown sugar
1 large egg
1/2 teaspoon vanilla extract
1/3 cup toffee bits
1/3 cup chocolate chunks
1/2 cup coarsely chopped salted almonds
Directions:
Preheat your oven to 350°F or 175°C. In a large bowl combine flour, baking soda, and sea salt. Whisk until combined. In a large bowl or in the bowl of a stand mixer combine butter that is softened to room temperature, and both white and brown sugar. Cream on low for about two minutes or until the sugar is well incorporated into the butter. Add one large egg and vanilla extract and continue mixing another 1 to 2 minutes or until the mixture is pale in colour and fluffy. Add in the dry ingredients and mix it with a spatula until just combined. Add in the toffee bits, chocolate chunks, and almonds and mix with a spatula. Scoop one and a half tablespoon balls onto a parchment lined cookie sheet. Bake in your preheated oven for 8 to 10 minutes, take them out as soon as the edges and bottoms just start to turn golden brown.

Ingredients
Cookie
1 cup flour
1/3 cup cocoa powder
1/4 tsp salt
1/2 cup butter, softened
2/3 cup sugar
1 large egg, separated
2 tbsp milk
1 tsp vanilla
Assembly
1 cup almonds, chopped (See Note 1)
1 cup Heath Toffee bits
Toppings
1/2 cup chocolate
1 tbsp butter
Sea Salt Flakes
Instructions
Cookie
Whisk together the flour, cocoa and salt in a medium bowl. Separate the egg yolk from the white into two bowls. Set aside.
By hand or using electric mixer, cream the butter and sugar until pale in color. Beat in the vanilla, milk and egg yolk. Add the flour/cocoa mixture and beat until blended. Refrigerate cookie dough 1 hour.
Assembly
Preheat oven to 350°F. Chop the almonds and place in a bowl to roll the cookies in. Whisk the egg white until frothy.
Scoop the cookie dough and roll into 24 balls. Place on lined baking sheet.
Using a spoon, roll to coat each dough ball in the egg white, gently shaking to remove excess egg white. Next, roll in the chopped almonds, pressing gently to adhere. Place back on baking sheet and repeat for all dough balls.
Make an indentation in the center of each dough ball with thumb or rounded end of wooden spoon or kitchen utensil. Bake for 10 minutes, remove from oven and gently press again if needed to make indentation in center of each cookie again. Fill each with Heath toffee bits and return to oven to bake another 2-3 minutes.
Meanwhile in a microwavable bowl, melt the chocolate pieces and butter. Stir until smooth. Drizzle over each cookie (See Note 2) and top with a sprinkle of sea salt flakes.
Notes
1. Roasted almonds with skin on or off can be used.
2. Either drizzle chocolate over cookies using a squeeze bottle or use a plastic bag and snip one of the corners to squeeze out.
