How To make Thyme Fig Fruitcake
1/2 c Unsweetened apple juice
1/2 ts Dried thyme
1 c Finely chopped dried figs
1 1/4 c Flour
1/4 c Cornmeal
2 ts Baking powder
1/4 ts Baking soda
6 tb Vegetable oil
2 tb Sugar
1 Egg
1/4 c Pine nuts, toasted
Combine the apple juice, thyme, and figs in a bowl. Set aside for 10 minutes. Stir together the flour, cornmeal, baking powder, and baking soda in a bowl. Beat the oil, sugar and egg until well blended. Pour the egg mixture into the flour. Add the pine nuts and fig mixture. Beat well. Pour the batter into an oiled and floured 9-inch round (or 8 inch square) baking pan. Bake in 350 F oven for 40 to 50 minutes. Cool for 5 minutes in the pan. Remove from pan and cool thoroughly. 1/12 recipe - 190 calories, 1 bread, 1 fruit, 1 1/2 fat exchange 27 grams

Stuffed Figs Recipe
Figs stuffed with meat – this dish is very unique, beautiful, colorful and delicious. Stuffed figs are perfect dish for festive meals, weekends and holidays.

Ingredients:
25-30 Figs
For the filling:
300g Ground beef/lamb
2 Onions, chopped
1/2 tablespoon Garam masala/Baharat
1/4 cup Ground almonds
Salt to taste
Pepper to taste
1 teaspoon Sumac
2-3 tablespoons Olive oil
Zaatar/thyme leaves
2-3 tablespoons of the fig filling
For the sauce:
3-4 tablespoons of the fig filling
2 tablespoons Pomegranate molasses/syrup
2 tablespoons Date syrup
3-4 tablespoons Olive oil
Salt to taste
Pepper to taste
Zaatar leaves
Directions:
1. Preheat oven to 180C (350F). Prepare large round baking dish and set aside.
2. Prepare the filling: In a medium sized pan heat olive oil. Add chopped onions and sauté until golden, about 10 minutes.
3. Add the meat and cook on high heat, while breaking it apart for about 5 minutes. Add the spices, almonds, zaatar and mix. Transfer to a bowl and allow to cool.
4. Prepare the figs: cut the top of the figs, then using a spoon, scoop out the flesh of the figs. Place all the flesh in a bowl for later.
5. Take about 2-3 tablespoons of the flesh and add the meat mixture and mix. Fill each fig with the meat mixture.
6. Arrange the figs in the baking pan and cover the fig lid.
7. Prepare the sauce: place all sauce ingredients in a bowl, add the fig flesh and mix until combined.
8. Pour over the figs.
9. Cover the dish with foil and bake for 30 minutes. After 30 minutes remove the foil and bake for another 15 minutes.
10. Serve!

Yield - Serves 6
Ingredients:
Vegetable oil – 2 tbsp
Garlic peeled – 1 tbsp (finely chopped)
Onion – 1 small (finely chopped)
Pimento pepper – 3 tbsp (finely chopped)
Thyme fresh – 2 tbsp (finely chopped)
Butter – 4oz
Salt to taste
Black pepper 1 tbsp
Cheese – 2 cup (grated)
Cassava – 3 lb – (cooked cut into 1inch cubes)
Evaporated milk – 2 cups
Coconut milk powder – 6 oz
Vegetable stock – 1 cup
Chive – 3 tbsp
Greasing of dish:
Vegetable oil – 2 tbsp
Method:
Grease dish for pie and set aside.
Pre heat oven to 350 degrees F.
Using a large pot, place on stove and turn on heat.
In hot pot add oil, garlic, onion, pimento, thyme, butter, chive, stir for 2 minutes.
Allow to cook for 5mins, uncover then add black pepper, warm water and coconut milk, vegetable stock, carnation milk and stir for 2minutes. Then add cassava.
Bring mixture to a boil.
Mix thoroughly and allow to cook for 5mins.
Remove from heat and add half the amount of grated cheese.
Then pour out into the greased dish and make level.
Add remainder of cheese on top.
Place in oven and bake for 45mins or until cheese turns golden brown.

1 tablespoon heavy whipping cream (or milk in a pinch)
