How To make Three Layer Fudge
3/4 c Butter, divided
1 (1-oz.) baking chocolate
1 1/4 c Sugar
2 t Vanilla, divided
1 Egg
2 c Crushed graham crackers
1 c Flaked coconut
1/2 c Nuts
2 T Light cream
2 c Confectioners' sugar
6 oz Semi-sweet chocolate
(1 generous cup, unmelted) 3 T Paramount crystals
(optional) Melt 1/2 cup butter and baking chocolate. Blend in sugar, 1 teaspoon vanilla, egg, graham crackers, coconut, and nuts. Mix well with a spoon, then with hands. Press mixture ungreased 11 1/2 x 7 1/2 x 1 1/2-inch pan; refrigerate Mix together 1/4 cup butter, light cream, confectioners' sugar, and 1 teaspoon vanilla; beat well. Spread over chocolate mixture in pan; chill. Melt semi-sweet chocolate and paramount crystals over hot, not boiling, water. Spread melted chocolate over white filling; chill. Cut into 1-inch squares. Store in refrigerator. Makes about 56 pieces.

¾ cup packed brown sugar

We’re starting to get into the festive spirit here at The Cake Mistress starting with this Choc Mint Christmas Fudge.
This fudge has three gorgeous layers: a creamy dark chocolate at the bottom, peppermint in the middle, and white chocolate fudge on top.
Sprinkle generously with Christmas-themed sprinkles and you have a sweet Christmas treat.
I found this choc mint fudge to be very smooth, soft and creamy, and very sweet.
The recipe is simple, unlike traditional fudge recipes and is great for those who don’t like dealing with boiling sugar syrup and candy thermometers. I will say the downside is if you love fudge with a more solid bite to it, this might not be for you.
This choc mint Christmas fudge is quite sweet, so small pieces will go a long way! I imagine them being great as little treats when visitors come over the festive season, or packaged up and given to others as edible Christmas gifts.

Easy Chocolate Peanut Butter Fudge

Here is what you'll need!
Vegan Chocolate & Peanut Butter Fudge
Makes 1 9x9-inch tray
INGREDIENTS
1 cup coconut butter
½ cup maple syrup
1½ cups peanut butter
1 teaspoon vanilla extract
1 4-ounce baking bar dark chocolate
PREPARATION
Add coconut butter and maple syrup to a saucepan over medium heat. Cook for 2-3 minutes while stirring constantly. The mixture should start out smooth then thicken into a dense paste.
Add peanut butter to the saucepan and stir to incorporate. Continue to cook for an additional 2-4 minutes until the mixture achieves a smooth and pourable texture.
Remove the peanut butter mixture from the heat and allow it to cool slightly. While the mixture cools, break up the baking bar of chocolate into a microwave-safe bowl and microwave it for 1 minute (stirring every 15 seconds) or until it is completely melted and smooth.
Prepare a 9x9-inch baking tray by spraying it with nonstick cooking spray and layering it with a piece of parchment paper. Pour half of the peanut butter mixture into the baking tray and spread it out evenly. Add the melted chocolate to the remaining peanut butter mixture and mix thoroughly. Once incorporated, layer the chocolate mixture into the baking tray, over top of the peanut butter layer, and spread it evenly. Give the tray a few shakes and taps to remove any possible air bubbles and place the tray in the freezer for 1.5-2 hours to set.
Turnover the baking tray to remove the fudge. Cut into small rectangular pieces before serving. Fudge should be stored in the refrigerator until ready to serve.
