3 Bean Salad Recipe ~ How to Make Three Bean Salad ~ Noreen's Kitchen
Greetings! Tonight I am making one of Rick's favorite salads to go a long with dinner. Three Bean Salad, that old fashioned classic is simple and delicious.
I am considering making this in bulk and canning it without the oil. I think it would make a lovely addition to our home canned selections!
This one is as easy as opening three cans, mixing them together and adding some chopped peppers, celery and onion. Top it all off with a simple dressing made from apple cider vinegar, light vegetable oil (I used sunflower) and some sugar and let it marinate for about an hour and you have a lovely cool side dish for a spring or summer meal or any time.
Rick loves to eat this the next day right out of a jar. He just grabs a fork and calls it lunch.

• 1/2 cup (60 grams) finely chopped fresh parsley, see notes
• 3/4 teaspoon dried oregano, see notes

• 1/4 cup (60 ml) red wine vinegar
• 1/4 cup (60 ml) extra-virgin olive oil
• 1 teaspoon Dijon mustard
