How To make Thick & Spicy Spaghetti Sauce1 From Loren Martin
2 lg Onions, chopped
2 md Green peppers, chop
1 c Chopped celery
3 Cl Garlic, minced
2 tb Olive oil
2 Pounds ground beef
1 pk Fresh mushrooms, sliced
3 6-oz cans tomato paste
1 16-oz can whole tomatoes
Undrained & chopped 3 8-oz cans tomato sauce
2 tb Worcestershire sauce
2 ts Chili powder
2 ts Dill weed
2 ts Whole oregano
(continued on sauce2) Brown ground beef with onion, green pepper, celery and garlic in hot oil in large dutch oven. Cook until meat is browned, stirring to crumble; drain well, and stir in remaining ingredients. Cover, bring to boil, and reduce heat to simmer for an additional 2 or 3 hours, stirring occasionally. Remove bay leaves and serve over pasta of choice. Sprinkle with shredded sharp cheddar cheese and grated Parmesan cheese if desired. Such as New York Pizza vs a California Style Pizza, so here I am doing things with Texas Flavors and Texas Style.
I like to use only fresh ingredients, no canned, boxed foods or seasoning packets.
Cooking should be fun and relaxing and that is what I strive for on Texas Cooking Today.

Recipe: Lobster Ravioli Filling
8 Ounces Lobster Meat
8 Ounces Ricotta Cheese
1 Large or 2 Small Shallots Finely Diced
2 Tablespoons Butter
1 Tablespoon Olive Oil
½ Cup Dry White Wine
2 Teaspoons Finely Chopped Fresh Basil
¼ Teaspoon Salt
Cook lobster by steaming or boiling it. After cooking allow lobster to cool then remove from its shell and chop up the meat. Mix chopped meat with ricotta and refrigerate to keep cool.
In a small fry pan place the diced shallots basil salt butter wine and olive oil. Cook over medium heat until all the wine has cooked off and the shallots are starting to caramelize. Allow this mixture to cool down then add it to the cheese and lobster mixture. Your filling is now ready for your pasta.

Recipe: Pasta
¾ Cup Flour
½ Cup Durham Wheat Semolina
2 Large Eggs
1 to 2 Tablespoons Olive Oil
½ Teaspoon Salt
Mix all the ingredients together, gently knead the dough for about two minutes then place it in an airtight container to rest for 30 minutes. After resting divide pasta in half and roll out each half to about 1/16 of an inch thick. Using water paint horizontal and vertical lines onto the lower half of your pasta spacing them about two inches apart. Place a small amount of filling in the middle of each square that has been painted onto the pasta. Fold the upper half of the pasta over on top of the filling and press down where the lines of water are to form your ravioli. Using a cutter wheel or a knife cut out each of the raviolis, burp each one to remove excess air then press firmly around the edges to seal them. Your Ravioli are now ready to be cooked. Cook in boiling hot water until the pasta is al dente, or firm to the bite.

Recipe: Alfredo Sauce
1 Cup Heavy Cream
½ Cup Freshly Grated Parmesan Cheese
1 Clove Garlic Crushed
2 Tablespoons Butter
In a wide bottom pan such as a fry pan place the butter and the Garlic over medium heat allow the butter to melt and lightly brown. After the butter is lightly browned remove the garlic clove then add the cream and bring it up to 130 to 150 Degrees. Reduce the heat to low and add in the cheese, stir until the cheese has completely melted and the sauce has steamed off some to thicken it.

INGREDIENTS
2 1/2 lbs boneless Beef Chuck Eye Roast, trimmed and cut into 3/4 inch cubes
Salt
Black Pepper
3-4 tbsp Vegetable Oil
4 oz Cremini Mushrooms, trimmed and quartered
1 Onion chopped
2 Carrots peeled and cut into 1/2-inch pieces
2 tbsp Tomato Paste
2 Garlic Cloves minced
1/2 cup Red Wine
3 tbsp All-Purpose Flour
1 1/2 cups Beef Broth
1 heaping tbsp Beef flavor Better Than Bouillon, dissolve in 1/4 cup boiling water
1 tsp Soy Sauce
1 tbsp Worcestershire
1/2 tsp Sugar
1 Bay Leaf
1 cup frozen Petite Peas
2 teaspoons Fresh Thyme, chopped
1 large Egg
1 9 inch store-bought Flat Crust

3 Chicken Breast
1 small Onion chopped
1 Jalapeno, chopped
1 Red Bell Pepper

1 lbs. White Beans, can use canned beans to reduce the cook time
1 15 oz. can Black Beans drained (optional)
1 15 oz. can Kidney Beans drained (optional)
1 15 oz. can diced Tomatoes
1 8 oz. can Tomato Sauce
1 cup cooking Wine
1/4 tsp. Salt
1/4 tsp. Black Pepper
1/2 tsp. Cumin
1 - 2 tbsp. Cinnamon
1/4 cup unsweetened Chocolate, grated finely
1 - 2 tbsp. Chili Powder, to taste
1/4 tsp. Cayenne Pepper or to taste
Sour Cream, (optional), topping
