How To make Thick & Rich Red Bean Soup
1 lb Red kidney beans, soaked
2 qt Water
1 ea Bay leaf
1 lg Green bell pepper, seeded &
quartered :
SOFRITO 1/4 c Olive oil
4 ea Garlic cloves, chopped
1 lg Onion, chopped
1 lg Green bell pepper, diced
1 c Tomatoes, coarsely chopped
1 tb Red wine vinegar
1/2 c Dry sherry
1/2 ts Oregano
1/2 ts Cumin
Salt & pepper :
TO FINISH--------------------------------- 2 md Potatoes, diced
1 c Butternut squash, diced
Olive oil to taste Combine beans, water bell pepper & salt, bring to a boil & simmer for 1 1/2 to 2 hours. Add more water as needed. SOFRITO: Heat oil in a skillet, saute the garlic, onion & bell pepper till tender. Add tomatoes, vinegar, sherry, oregano, cumin, salt & pepper & cook 10 minutes. When beans are tender, add the sofrito, potatoes & squash. Stir to blend, & cook over a low heat until the potatoes & squash are tender. Either serve as is or puree. This savoury soup meets your iron and protein requirement through the tasty rajma in a perfect way. On the other hand, the vitamin c from the tomatoes and lemon juice helps in the absorption of iron during digestion.
Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes 4 servings
Ingredients
1/2 cup soaked rajma (kidney beans)
1 1/2 tsp oil
1/2 cup finely chopped onions
3 garlic (lehsun) cloves , roughly chopped
1 1/2 cups finely chopped tomatoes
1/2 tsp chilli powder
salt to taste
1 tsp lemon juice
For The Garnish
1 tbsp finely chopped yellow capsicum
1 tbsp finely chopped green capsicum
1 tbsp finely chopped spring onion greens
1 tbsp finely chopped tomatoes
Method
1. Heat the oil in a pressure cooker, add the onions and garlic and sauté on a medium flame for 1 to 2 minutes.
2. Add the tomatoes, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
3. Add the rajma, chilli powder, salt and 2 cups of water, mix well and pressure cook for 4 whistles.
4. Allow the steam to escape before opening the lid.
5. Allow the mixture to cool completely and blend in a mixer to a smooth purée.
6. Transfer the purée into a deep non-stick pan, add ½ cup water and mix well.
7. Bring to a boil and cook on a medium flame for 2 to 3 minutes while stirring occasionally.
8. Add the lemon juice and mix well.
Serve hot garnished with yellow capsicum, green capsicum, spring onions greens and tomatoes.

Rich Source of Protein and Fiber Soup Vegeterian and Vegan Recipe
This food is great source of protein, Fiber, Manganese, Vitamin B1 and B6. It is also a great food for vegetarian and vegan diet with lots of greens and legumes.
What you need:
1 cup of Red Beans
1 cup of Lentils
1 cup of Chickpeas
1 Tbsp Dry Mint / or 1/4 cup chopped fresh mint
2 Tbsp Dry Cilantro or 1/2 cup Chopped Fresh Cilantro
4 Tbsp Dry Chives or 3/4 cup chopped fresh Chives
2 Tbsp Dry Coriander or 1/2 cup chopped Fresh Coriander
1 Small Onion
1 Tsp olive oil/vegetable oil
Turmeric /black pepper and salt for seasoning
Baby spinach 0.5 Ib
White Flour 2 Tbsp
1/5 pack of Pasta for Vegan diet use Vegan Pasta
In this recipe we use 3 different legumes that they have different cooking time. You can either use canned red beans and canned Chickpeas or cook them separately. Lentil can be cooked under 30 min so no need to cook lentil separately.
I recommend soaking your legume overnight for proper digestion. Legumes have Phytic acid, by soaking you breaking the Phytic acid for easy digestion.
Soak all of the Dry vegetables into a cup of water for 10 minutes. You can use fresh vegetable in this step as well.
Chop 1 small onion and fry it till golden, add a little bit of Turmeric and Black pepper along with salt according to your taste. Main active ingredient in Turmeric is Curcumin which has anti-inflammatory effect and is a very strong anti-oxidant. Main active ingredient in Black pepper is Piperine which enhances the absorption of turmeric into you blood stream. So try to add more Turmeric and black pepper into your daily diet
Then add legumes (Red Beans, Chickpeas and Lentils) to the pot and all of the Dry Vegetables. Put it on a medium heat till the water reduces to half which usually takes around 45 min. for getting a better texture and more thick water in your soup you can dissolve 2 Tbs white Flour with cold water and add to the soup. You should dissolve the flour with cold water to prevent clumping. After you add the dissolved flour you should stir the soup to mix it properly and also prevent further clumping.
Then you can add 1/5 pasta (any pasta you can use) for vegan diet you can use Vegan pasta and wait around 8 min for the pasta to cook.
