Creamy Chicken and Mushroom Rigatoni Pasta Recipe
Chicken
1 lb chicken tenderloins
1 tsp seasoning salt
1/2 tsp garlic salt with parsley
1 tsp cajun seasoning
3/4 tsp parsley flakes
1/2 tsp black pepper
1 tsp italian seasoning
1 tsp basil
1/2 tsp garlic powder
1/2 tsp crushed red pepper
3/4 tsp paprika
2 tbls olive oil
Pasta
1 lb box rigatoni
olive oil
salt
boiling water
Onions and Creamy Sauce
1 medium onion chopped
2 tbls butter
2 tbls olive oil
1 tsp sugar
1/2 tsp salt
2 cloves garlic, chopped
1 tbls basil
1 tbls parsley
8 oz mushrooms
1 tbls butter
3/4 cup sherry cooking wine
2 cups heavy cream divided
1 bag (6 oz) parmesan cheese
Directions:
Mix together all seasonings and Chicken.
Set heat to medium, add chicken to pot turning every 2 minutes untill fully cooked.
Set the chicken aside to rest and develop juices.
Chop the onion into small pieces.
In the same pot at 2 tbls of butter and 2 tbls olive.
Add the onion, sugar, and salt.
Cook for about 15 minutes untill caramelized.
Meanwhile, chop the chicken into bite sized pieces.
Once the onions are fully cooked, add the garlic, basil, parsley, butter, and mushrooms.
After about 3 minutes, add the sherry.
Now, cook the rigatoni according to box directions.
Once the wine reduces, add 1 cup of heavy cream. Mix until slightly bubbling.
Drain the rigatoni, do not rinse! This helps keep the necessary starch to better the sauce.
Add the chicken, parmesan, and leftover heavy cream .
Add rigatoni, and fold lightly.
Garnish with basil, parsley, and italian seasoning. Add freshly cracked black pepper.
Voilà!
Serve and enjoy immediately:))

180 g Fettuccine

Recreating MAGGIANO'S Famous Rigatoni D! The Perfect Chicken & Mushroom Pasta Recipe
Our final addition to our Taste and Recreate noodle theme is Maggiano's Rigatoni D. Vincent and I used to visit the Maggiano's Little Italy in Austin all the time. When we moved to the Bay Area, we were so happy to see they had a branch here!
One of our favorite pasta dishes is the Rigatoni D, with grilled chicken, caramelized onions, button mushrooms, all in a creamy sauce.
I originally thought since Maggiano's had their Rigatoni D recipe on their website that recreating this dish would be a fairly simple task... I was mistaken...
With several modifications listed below, here is the original Maggiano's recipe that I followed in the video.
Original Recipe:
Their original recipe serves 4-6, so I halved the recipe when recreating it.
- Add salt, pepper, and herbs to the chicken (basil, oregano, thyme)
- For 2 servings of pasta, I used at least 8 oz of pasta (half a 16oz box)
- Instead of 1 whole cup of heavy cream, I only added 1/2 cup.
- Separately caramelize the onions, because the oven method DOESN'T work!

Ingredients:-
2 tbsp olive oil
4-5 cloves garlic
A packet of pasta
1 onion
1 tsp dried thyme
1 tsp dried mixed Italian herbs
1 tsp black pepper
1/2 kg chicken thigh
200 grams of mushrooms
150 ml cream
Parsley to garnish
Salt to taste
Method:-
- In a saucepan heat Olive Oil and saute garlic, onion, thyme with italian herbs, black pepper and salt.
- Add the chicken and cook for 7 minutes.
- Then add mushrooms and cook until the mushrooms release liquids.
- Pour the cream in batches as required and stir.
- Now add coriander and mix well.
Delicious and Creamy Chicken and Mushroom Pasta is ready to serve!
