How To make The Perfect Pancake
2 ts Baking powder
1 t Sugar
1 t Salt
1 1/2 c Flour
2 Eggs
1 1/2 c Milk
3 tb Melted vegetable shortening
-(margarine can be -substituted in a pinch)
Sift baking powder, sugar, salt into a bowl. Add eggs, milk and shortening (shortening can melted in microwave at high for approximately 2.5 minutes). Mix all ingredients and scrape bowl. Heat fry pan or griddle to medium high. (Lightly grease pan or griddle with Pam or margarine.) Use 1/4 cup of batter for each pancake. Cook until bubbles form on the uncooked surface or the edges become dry. Turn pancake until golden brown on underside and serve. Option: The amount of milk can be varied to change the thickness of the pancakes. However, please note that the batter will rise during cooking so experiment by adding more milk as you cook to the remaining batter on your first batch. *********** The Pancake: There is rarely anything more satisfying than good pancakes, possibly because we rely so heavily on egg dishes for breakfast. You’ll need
2 eggs
2 tbsp granulated sugar
200 ml milk
1 + ¼ cups all-purpose flour
2 tsp baking powder
2 tsp vanilla powder
To cook;
Oil
1 cup = 240 ml
Here’s how
1- Whisk together 2 eggs and 2 tablespoons of granulated sugar.
2- Add 200 ml of milk, 1 + ¼ cup of all-purpose flour, 2 tsp of baking powder and 2 tsp vanilla powder. Beat until you have a smooth batter.
3- Heat a lightly oiled non-stick frying pan over a medium heat.
4- Gently pour about 1 tbsp of batter onto the hot pan.
5- Wait until the bubbles form on the surface and once they start popping, flip the pancake over and cook until both sides are golden.
6- Repeat until all the batter is used up.
7- Once both sides are golden, transfer to a serving plate!

2 c (280g) AP flour
1/4 c (50g) maple sugar
1 tbsp (12g) baking powder
1/2 tsp (3g) baking soda
1/2 tsp (3g) fine salt
1.5 c (341g) milk
2 eggs
1 tsp vanilla extract
2 oz (57g) melted butter or vegetable oil
1. Mix all the dry ingredients together in a bowl.
2. In a separate container, whisk together the milk, eggs, and vanilla. Add in the melted butter or oil.
3. Combine the dry and wet ingredients and mix just until you can't see dry flour (there will be some lumps).
4. Scoop onto a lightly greased griddle, cook until the bottom is golden, flip, and cook until golden again.
