How To make Tex Mex Cornbread
2 Egg
2/3 c Salad oil
1 c Sour cream
1 c Corn meal, yellow
3/4 c Cream style corn
1 tb Baking Powder
1 1/2 ts Salt
2 Green Onion Tops chopped fin
4 Jalapeno Peppers sm chpped
1 c Cheddar cheese, grated
Combine all ingredients except cheese...add half the cheese..pour into a well greased 8/12 pan and rest of cheese bake 425 20-25 min from"Deep in the Heart of Texas" received from YLR in cookbook swap *the needler* Notes: I used 1 cup of cream style corn, that is what is in those little cans and I used one with no salt. I thought it was a bit oily for my taste, so next time I would use less oil maybe about a half cup. I used 3 heaping tablespoons of Ortego hot chopped Jalopenos...I would use more next time..it was ok but I like it hotter. It was fine for those who dont like it really hot. frances *the needler*

2 T. melted butter
1/4 cup milk

1/4 cup plus 1T. cornmeal

6 inch skillet 400 degrees 17 minutes
Tex mex squash casserole
4 cups chopped squash
2 T. butter
1/2 onion
1/2 red bell pepper
1 t. cumin
1 cup frozen corn
1 t. minced garlic
1 T. flour
1 cup milk
salt, pepper
4 oz. green chilis
1 cup cornbread broke up
1 cup cheese
375. 20 minutes

COWBOY CORNBREAD CASSEROLE *TEX-MEX TACO STYLE*
This is one of those cheap dinners you can make and still have leftovers! Super easy taco casserole with cornbread. Give it a try and let me know what you think!
Ingredients needed:
1 packet of taco seasoning
1 can cream of corn
1 can ranch style beans (flavor of your choice we use Jalapeno)
2 boxes Jiffy corn muffin mix (or make your own with cornmeal)
1 pound ground beef or turkey or up the beans (use what you got)
Add canned tomato or rotel or anything you wish to beef up this meal
prepare box mix as specified on box and combine with the cream of corn. Cook meat and drain off grease. Season meat and add the beans and other beef up items. Place half the cornbread mix in pan then add meat mix and top with remaining cornbread mix. Top with cheese of choice and bake 350 F for 20 minutes or so. Just keep checking it and top with desired garnish.
DOUBLE meat mix for thicker layer. Shared other ways we make this in the video but this is the most used option.

Ive been making this for years. you could literally have it as a snack because its so filling. Really good recipe and really easy! You'll love it!

1 cup grated cheddar cheese
1/2 cup chopped onion
1/3 cup vegetable oil
2 eggs
2/3 cup milk
2 tablespoons baking powder
1/2 cup all purpose flour
1 cup cornmeal
1 cup chopped jalapeños
1/2 teaspoon salt
1 (14 oz) can creamed corn
or spray, for the pan butter
Directions
Preheat oven to 350 °F. Grease an 8 by 8-inch or 9 by 9-inch square pan with softened butter or nonstick cooking spray. Set aside.
In a large bowl, mix together cornmeal, flour, baking powder, milk, eggs, salt and oil. Stir in onion and creamed corn. Pour half of batter into prepared pan. Top with cheese and peppers, spreading onto batter. Pour remaining batter on top of cheese and peppers. Bake for about 35 minutes or until golden on top and a toothpick inserted into the center comes out clean. Let cool slightly before cutting into squares. Makes 1 8×8″ or 9×9″ cornbread.
