How To make Tex Mex Beans with Cornmeal Dumplings
1/3 c Flour
1 ts Baking powder
Beaten Egg White 2 tb Cooking Oil
1 c Chopped Onion
15 oz Can Garbanzo Beans, drained
15 oz Can Tomato Sauce
2 ts Chili powder
1 1/2 ts Cornstarch
1/3 c Yellow Cornmeal
1/4 ts Salt
1/4 c Skim Milk
3/4 c Water
Clove Garlic, minced 15 oz Can Red Kidney Beans,drained
4 oz Can diced green chili pepper
1/4 ts Salt
In a med mixing bowl, stir together flour, cornmeal, baking powder, and 1/4 t salt; set aside. In a small bowl combine egg white, milk, and oil;
set aside. In a 10" skillet combine the water, onion, and garlic. Bring to boiling; reduce heat. Cover and simmer 5 minutes or till tender. Stir in garbanzo beans, kidney beans, tomato sauce, drained green chili peppers, chili powder, and 1/4 t salt. In a small bowl stir together cornstarch and 1 T water. Stir into bean mixture. Cook and stir till slightly thickened and bubbly. Reduce heat. For dumplings, add milk mixture to cornmeal mixture; stir just until combined. Drop dumpling mixture from a Tablespoon to make 5 mounds atop bean mixture. Cover and simmer for 10-12 minutes or till a toothpick inserted in the center of a dumpling comes out clean. *************************************************************** Per serving: 313 calories, 13 g protein, 50 g carbohydrates, 8 g fat, 0 mg cholesterol, 1023 mg sodium, 839 mg potassium.

My Recipe for Mexican Cornbread Casserole - One Pot Meal that's Easy to Make
I am on this Mexican Food kick and just had to put this Mexican Cornbread Casserole together and give it a try. Gosh it was easy and so so good. You have to try this for your family.

Mexican Cornbread Casserole Ingredients
2 pounds ground beef or ground chuck
1/2 lg red onion diced
1-2 pks of Taco Seasoning Mix
1-2 cups water
1 15 oz can Petite Diced Tomatoes
1 15 oz can Tomato Sauce
2 cups frozen corn
1 can black beans rinsed and drained
Jalapeno Slices to your taste
1 Tbsp Chicken Bouillon
1/2 Tbsp Coarse Ground Black Pepper
2 boxes Jiffy Corn Muffin Mix (Prepared together)
1 small can green chiles
1 cup cheese or to your taste
Bake at 400 degrees for 35 minutes then add your cheese and bake for another 10-20 minutes until cheese is melted through.

Ingredients -
Vegetable Fajita Mix -
1 tsp (5ml) - Neutral Oil (Vegetable Oil)
1 - Brown (Yellow) Onion, Thinly Sliced
1 - Green Bell Pepper (Capsicum), Thinly Sliced
1/2 tsp (1.5g) - Smoked Paprika
1/2 tsp (1.5g) - Ground Cumin
Seasoning To Taste
Turkey Mix -
2 tsp (10ml) - Neutral Oil (Vegetable Oil)
500g (1.1lbs) - Lean Turkey Mince
1 Tbsp (7g) - Ground Cumin
1 tsp (2.5g) - Sweet Paprika
1 tsp (2.5g) - Chilli Powder
1 Cup (200g)- Salsa of Choice
Seasoning To Taste
Wraps & Fillings -
2 - Avocados, Mashed
1/2 - Lime, Juiced
Seasoning To Taste
1 Can (400g) - Black Beans, Rinsed
5 - Tortillas
1-2 - Baby Cos (Romaine Lettuce), Shredded
150g (5.2oz) - Mozzarella Cheese, Shredded
Notes -
This recipe can easily be changed to any ingredients you prefer.
If freezing, the lettuce and avocado can be left out and added fresh upon being thawed.
