So here ya go.
Ingredients:
4 cups cooked rice
2 cup salsa
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon dried oregano
1 can roasted peppers
1 small diced white or yellow onion or 1/2 onion and 1 green pepper
1 can corn (drained)
1 can black beans (drained/rinsed)
2 cups cooked chicken (chunk or shredded, your choice)
2 cups chicken stock
2 cups shredded cheese
2 cups tortilla chips in large pieces
Heat oven to 350 degrees.
Prepare a 9×13 baking dish and spray with cooking spray. Set aside.
Cook rice but cook al dente because it will cook more in the oven
In large bowl, combine rice, salsa, and spices
Now add in the roasted peppers, diced onion, corn, black beans, chicken, and 1 cup of the shredded cheese. Stir together to combine.
Fold in 1 cup of the tortilla chips and stir lightly to combine, trying not to break chips up to much.
Pour the mixture into the prepared baking dish and add chicken stock, cover with foil and cook for 30-35 minutes.
Now sprinkle the remaining cheese on top and crush up the remaining chips and sprinkle over the casserole.
With the tin foil off let cook an additional 10-15 minutes but watch closely so chips/cheese don’t burn.
Serve and top with additional sour cream, guacamole, salsa or whatever you like.

Meatless Tex-Mex Casserole
You can assemble this crowd-pleaser several hours ahead of time, and then bake it off 15-20 minutes before serving time. (The baked casserole freezes perfectly.) Ingredients are listed below -- please watch the video for instructions.
1 onion, diced
1 green bell pepper, roughly diced
1 medium zucchini, roughly diced
1 (4.5-ounce) can chopped green chiles
26.5-ounce carton POMI strained tomatoes (or, use a 29-ounce can pureed tomatoes)
1 (2.25-ounce) can sliced black olives, drained
1/2 teaspoon kosher salt (or to taste)
1/2 teaspoon garlic powder (or to taste)
1/2 to 1 teaspoon chili powder (or to taste)
1/4 teaspoon cayenne pepper (or to taste)
1 (15.5 ounce) can black beans, drained and rinsed
1/4 cup roughly chopped cilantro
12 corn tortillas
1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
Bake at 400°F until the cheese melts -- 15 to 20 minutes. Cool for 15-30 minutes before serving.

2 packs of cornbread mix, i used jiffy brand
1.5 lbs ground beef
10 oz. can of diced tomatoes with chilies, do not drain
15 oz. can of corn, drained
15.5 oz. can of chili beans, do not drain
1 cup shredded cheddar cheese
1 pack taco seasoning
2 eggs
1 cup of milk
Preheat oven 425°
In a skillet brown ground beef and drain grease if your puts out some.
Now in a large bowl mix all ingredients well, if your mixture is alittle dry add more milk.
Pour into a sprayed 9x13 Casserole dish.
Bake approximately 25-30 minutes until toothpick comes out clean
Let sit for 10 minutes before slicing and serving.
Garnish each slice with a dollop of sour cream, sprinkle of cheese, sprinkle chopped green onions, sprinkle of chopped cilantro.
You can also use a dollop of salsa too.

How to Make Taco Burrito Nacho Tex Mex Casserole
INGREDIENTS:
1 1/2 pounds ground beef
1 cup diced onions
1 cup diced bell pepper
1/2 seeded minced jalapeno
1/2 cup corn
1 small can rinsed and drained black beans
1 20oz can diced tomatoes or Rotelle
1/2 cup salsa
1 tbsp. taco seasoning
1 tsp. chili powder
1 tsp. oregano
1/2 tsp. garlic powder
1/2 tsp. cumin
salt and black pepper
5-6 flour tortillas
1 1/2 cups crumbled tortilla chips
3 cups shredded cheese
1 cup sour cream
6 garden onions chopped - whites and greens separated
Garnishes: optional
Sliced black olives
Sliced jalapenos
Preheat oven to 375 degrees.
In a pan on medium high heat add ground beef.
Cook, stir and chop for 5-7 minutes until done.
Drain off any excess fat if needed or wanted.
Add dice onions, bell pepper, minced jalapeno (optional),
salt and black pepper. Stir and cook for 2-3 minutes.
Add spices, stir and cook for one minute.
Add canned diced tomatoes and salsa, cook and stir until
combined for 1-2 minutes.
Add corn and drained black beans. Stir and cook for one to
two minutes. Remove from heat.
In a deep baking dish add some crushed tortilla chips and a
couple spoonfuls of the meat mixture on the bottom.
Layer flour tortillas (cut some in strips to fit in corners
and sides), meat mixture, chopped green onions and cheese.
Add more flour tortillas, meat mixture, chopped green onions,
crushed tortilla chips and cheese on top.
Optional: garnish with sliced black olives and jalapenos.
Bake at 375 degrees for 30 minutes or until the cheese is
golden and bubbly.
Let rest for 15 minutes before serving.
Enjoy.
