Red Pork Tamales Recipe
Makes 23-24 tamales
2 lbs pork shoulder Boston butt boneless
☞ Aromatic for broth
1/2 medium, white onion
4 garlic cloves, whole
2 bayleaf :
2 tsp salt, kosher :
1/2 tsp dry oregano :
1/2 tsp black peppercorns, whole :
10-12 cups of water
☞ For browning
2 TBSP of oil
For the guajillo sauce
8 large guajillos :
2 ancho chiles :
4 chiles de arbol :
1/4 medium white onion, sautéed
☞ Molcajete
2 garlic cloves
1/2 tsp salt, kosher
1/2 tsp cumin, whole :
2 TBSP water
☞ Additionally for sauce
2 cups broth to rehydrate chilis
1 cup of broth pour into blender to get the last bit of chili sauce
1 TBSP oil to fry the sauce
Season sauce to taste, I did 3/4 tsp
Note: remember the broth also has salt
For the masa dough
6 cups masa harina: ???? ( maseca is cheaper at the grocery store)
1 tsp baking powder :
Organic pork lard:
1/2 cup packed vegetable shortening
1 1/2 tsp salt, kosher
3 2/3 cup of broth

But if one or both of those ingredients isn’t available to you, don’t fret: you can make delicious tamales with alternatives. And you should. Because the iconic aroma of steaming tamales is something everyone should experience, triggering, as it does, a Pavlovian-like watering of the mouth, a response that doesn’t stop until a finished tamal is pulled from the steamy steamer and devoured.

Green Chile chicken tamales
Makes: 26 TAMALES
For the chicken
Chicken breast, bone in 2 lbs
Salt 1 1/2 tsp
Water 10 cups
White onion, small 1 ea
* Reserve chicken broth will need approximately 4 1/2 cups of it
For the salsa
Tomatillos, medium 8ea or (1lb 2oz)
Jalapeños, medium 4 ea or (5oz)
Cloves, whole 2 ea
Cumin, whole 1/4 tsp
Black pepper, whole 5 ea
Garlic, cloves 2 ea
Cilantro, fresh Small bunch (31g)
Canola oil 2 TBSP
Salt 1 1/2 tsp
*Add 1/4 cup of water to the blender to get the last bit of Chile
For the masa
Masa 5 cups or (1lb 6oz)
Baking powder 1/4 tsp
Lard 1 cup or (8oz)
Canola oil 1/4 cup
Salt 1 1/4 tsp

MASA TO MAKE TAMALES IS SO EASY IS NOT EVEN FUNNY
I am sharing the way I started making tamales, when I was a kid I hated making tamales it was so much work making the masa and spreading the masa into the corn husk , but know I am going to share with you an easy way is not even funny. Now I love making tamales is so easy and so fast. Here is the recipe for the masa but I also have 2 more tutorials to show you how to make a chicken with green sauce filling and a rajas with cheese filling they are here in my channel.
MASA FOR TAMALES THE EASY WAY
1 Kg or (1,000) grams of maseca for tamales
8 cups of chicken broth ( it needs to be very hot)
2 cups of oil regular cooking oil you can also use vegetable shortening or lard / make sure you melt the shortening or the lard before you use it
3 tsp of baking powder this will help the masa for the tamales be more fluffy
corn husk they need to be soak in hot water for 25-30 mins. you want them to be nice and soft before you use them
Kitchen aid mixer but not necessary
**** I really don’t use salt I use the know suiza chicken broth (powder) to give all my food dishes flavor but you can use the salt if you prefer
