1 large chopped ONION
2 tablespoons minced Garlic
2 pounds Ground Beef
Salt and Pepper to taste
1 tablespoon Olive Oil
In a large pot, saute' onion and garlic in the olive oil to soften. Add the ground beef and brown. Drain any excess grease and then add the following:
(2) 15-ounce cans Whole Kernel Corn, DRAINED
(2) 15-ounce cans Black Beans, DRAINED
(2) 16-ounce cans Pinto Beans, DRAINED
(2) 14.5-ounce cans Diced Tomatoes WITH THE JUICE
(2) 15-ounce cans Tomato Sauce
(2) 14.5-ounce cans Beef Broth
(1) 10-ounce can Enchilada Sauce
(1) 1-ounce package Ranch Dressing Mix
(1) 1-ounce package Taco Seasoning
Let cook for about 15 to 20 minutes just to heat thru.
Add some shredded Velveeta just before serving and stir in to serve. Can add shredded cheese to each serving as well.
Options can include 2 cans of Hominy. You also can add a can of Rotel diced tomatoes and chilies with the juice.

This recipe is so delicious that I make it at least twice a month for my family's dinner. It's easy to make and had you out of the kitchen in no time. It's also gluten free. Make sure to read labels.
I like to garnish it up with grated mild cheddar cheese, sour cream, avocado and corn chips. Trader Joe's has a delicious organic corn chip I just love with this recipe.
I make this dish as healthy as I can by using 100% grass fed beef, organic frozen corn, and my very own taco seasoning. The video for the taco seasoning can be found here:
To make this outstanding my recommendation is to caramelize your onions for at least 35 minutes. It brings out amazing flavor. In fact, I'm thinking about using 2 onions next time I make this.
Remember how much the onion cooked down in the video? A little bit more onion would make it even better.

Easy Taco Soup Recipe!
One of our very favorite recipes! Make a big pot and freeze the leftovers! Easy!
Taco Soup
You will need:
-1lb ground beef
-15 oz can of Pinto Beans
-15 oz can of Black Beans
-15 oz can of Tomato Sauce
-1 can Rotel (Diced Tomatoes & Green Chilies)
-Packet of Taco Seasoning
-Packet of Ranch Dressing Mix (Powder)
-Masa (optional)
-Can of corn (optional)
1. Brown ground beef and drain fat.
2. Stir in Tomato Sauce, Rotel, Taco Seasoning, and Ranch Seasoning, and 1 cup water
3. Simmer on med-low with lid on for 20-30 minutes
4. Add rinsed beans. Add corn (optional).
5. Simmer 15-20 minutes.
6. Add 1/4 cup masa (mixed with water to make a watery paste).
7. Simmer 10-15 minutes.
8. Top with corn chips, sour cream, and cheese if desired!
