How To make Taco Meatballs
1 lb Beef, ground
1 c Green pepper
1 c Rice, cooked
2 ts Garlic salt
11 oz Cheddar cheese soup
1 c Onion
1 c Celery
2 Egg, beaten
8 oz Taco sauce
Mix all but last two ingredients. (I puree vegetables in blender rather than chopping.) Form meat balls and place in 2- 1/2 qt. dish. Bake at 350 degrees for 30 minutes. While baking, heat taco sauce and soup on stove. Pour over meatballs and bake another 30 minutes.

Delicious taco flavoured meatballs with cheddar stuffed inside each of them, the meatballs that anyone would like to take a bite! You can enjoy them while on South Beach Diet too!

Taco Meatballs
Recipe-
Preheat the oven to 400 degrees
Line a large baking sheet with parchment paper or foil
In a large bowl, combine the following:
1 egg
1 tbsp of tomato paste
1 oz packet of reduced sodium taco seasoning
1/8 cup of dried cilantro
1/3 cup of breadcrumbs
Desired amount of chopped chiles & diced tomatoes
Mix well
Add 1 lb of raw ground beef to the mixture
Mix & blend until all ingredients are combined
Heavily coat the baking sheet with cooking spray
Shape the meat mixture into meatballs, & place them on the prepared pan
Cook for 20 minutes
Garnish the top of each meatball with-
Salsa, chihuahua shredded cheese, & tortilla strips to taste

Saucy Mexican Meatballs Appetizer Recipe

You can serve up these Mexican appetizers with little slices of bread to dip into the flavorful sauce. Before you dive into making meatballs, preheat your oven to 350 degrees. In a large bowl, pour in 1/2 cup of Masa Harina and 1/4 cup of warm water. Masa Harina is just a corn-based flour you can use to create authentic Mexican cuisine for these homemade meatballs. Stir these ingredients together and add to them 1 pound of lean ground pork, 1 pound of lean ground beef, 1 beaten egg, four cloves of minced garlic, 1-1/2 teaspoons of salt, and 1/2 teaspoon of freshly ground black pepper. Use your hands to mix everything together well and begin forming them into 1-inch cocktail meatballs, using your palms to roll them together. This meatball appetizer recipe should create between six to eight dozen meatballs. Place them on a 15 x 10 x 1-inch baking pan and bake for 20 to 25 minutes. While the party meatballs are browning to perfection, let's get started on the sauce. In a food processor, pour in a 28-ounce can of whole tomatoes, juice and all, along with three drained Chipotle chili peppers in adobo sauce. Puree the peppers and tomatoes together, pressing it through a sieve over a small bowl once they're pureed to remove the tough skins. Pour 1 tablespoon of cooking oil into a Dutch oven over medium heat. Once the oil is heated, add to the Dutch oven 1/2 cup of finely chopped onions and two cloves of minced garlic. Cook until the onion is tender and add the meatball sauce, 1-1/2 teaspoons of instant chicken bouillon granules, and 1 teaspoon of ground cumin. Bring the sauce to a boil then reduce the heat to medium and let simmer uncovered for ten minutes. Add the meatballs to the Dutch oven to coat them and give them one last layer of flavor. This recipe for meatballs makes a large batch, making them perfect party appetizers to give your get together a bit of a fiesta flair!
